Summer Charcuterie Board
A snack board is perfect for any occasion because they’re so versatile. You can customize your appetizer assortment with your favorite summer fruits, meats, cheeses, and more. A benefit of creating them in the summer is that you can buy fresh fruits and vegetables from your local farmers market to create a colorful and gourmet grazing display.
I chose to use two types of melons and strawberries that are usually in season all summer long. To that, I added a couple of cheese roses that are super easy to make and of course, a few slices of deli meats. Different shapes and sizes of the items create a stunning visual display.
Combining this summer appetizer spread with a delicious brunch charcuterie would be a great idea for a summer brunch for family and friends, or even to treat the moms in your life on Mother’s Day. I would even make a smaller version of this summer board just for my lunch!
What Is A Charcuterie Board?
Charcuterie boards, also known as grazing or snack boards are very popular. They’re so easy to make for a party, special event, or even to serve for dinner. Basically, they are boards filled with a variety of different ingredients like meats, cheese, dried and fresh fruit, and dippers.
Can you make a grazing board a day in advance?
No, it’s not a great idea to make a grazing board a day in advance because then you risk some of the foods getting soggy, stale, or brown. But you can make one 30 minutes or so before you are planning to serve it. Wrap it in plastic wrap, and store it in the fridge before you until you’re ready to serve.

- cutting board
- knife

📃Ingredients
- ½ cantaloupe
- ½ honeydew melon
- 6 strawberries, sliced in half
- 4 slices prosciutto
- 6 slices thin ham (round)
- 9 mozzarella balls
- 9 slices ultra-thin (Sargento makes it) provolone cheese (for roses)
- 2 sprigs of rosemary, cut into smaller sections
Directions
Cut your ½ of cantaloupe in half, scrape the seeds out, then cut two ¼-½ inch slices off the side with melon showing. Then cut those in half. Use a melon baller to make balls from the rest of the melon half. Next, cut your ½ honeydew melon in half, scrape the seeds out, then cut two ¼-½ inch slices off the side with the melon showing. Then cut those into triangles. Use a melon baller to make balls from the rest of the melon half. Then, cut your strawberries in half, green intact as shown in the picture below.
Arrange 5 slices of cheese in a straight line, overlapping by ⅓. Then fold in half, flip and start from the inside piece, start rolling loosely to make a rose. Secure with a toothpick. Repeat with the other 4 slices.
Start arranging your board by placing the roses about 2 inches from the edge, on alternating sides. Fold the ham in half, then half again, and arrange on the left side. Fold the prosciutto in thirds, then roll and arrange to start from the top middle, working your way towards the right.
Arrange 4 cantaloupe slices (skin side down) starting from the right rose, to the edge of the platter. Scatter a few of each of the melon balls.
Add a few strawberry halves, then scatter more melons. Arrange honeydew triangles near the cheese roses and more strawberries.
Fill in larger visible empty spaces with sprigs of rosemary. Add the mozzarella balls to fill in the remaining gaps. Serve and enjoy!
Other ideas you can use
- You use different berries such as blackberries or raspberries.
- Substitute one of the melons for watermelon slices.
- Use a variety of cheeses like cheddar, Monterey Jack, or white cheddar.
- The types of meats can be switched out to use slices of salami, or pepperoni.
- Adding crackers to the tray would be good to eat with the cheese and meats.
- Customize the board with the foods you enjoy or create a theme for a birthday party or holiday.
