Instructions

For the roast

  • Spray crockpot with non-stick spray.
  • Season roast with salt and pepper and place in bottom of slow cooker.
  • Top with onion and garlic.
  • Pour over the bottle of BBQ sauce.
  • Cover and continue to cook on low** for 6-7 hours. Shred meat with fork and stir back into sauce. Cover again and cook one more hour before serving. Pile filling into rolls.
  • **If you prefer to cook beef on high, do so for 4-5 hours and then shred. Cook another hour.

Notes

  • Because this recipe takes about 7 hours to make, it's perfect to start in the morning and it will be ready when you get home.
  • Use whatever BBQ sauce you like or create a homemade one like this Cherry Bourbon BBQ Sauce.
  • There's no need to brown the roast before you place it in the slow cooker, but you definitely do so.
  • Add some sliced jalapenos or pepperoncini peppers to the crock pot for a spicy taste.
  • This recipe is perfect for making ahead of time. Prepare the beef and sauce and store it in the refrigerator until ready to serve.
  • Leftover BBQ beef can be frozen for later. Store it in an airtight container in the freezer for up to 3 months.
