So much for the Fall-like temps! Going to be in the 80’s again but I have the windows open and enjoying the fresh air.  I haven’t been able to cook or bake like I wanted to since I was working on a presentation and paper for one of my classes.  That is behind me now but two more are on the horizon! The other evening we were debating on what to have for dinner – order pizza, make something quick at home, or just have cereal.  Pitiful, isn’t it?  I decided to make something quick at home as I already had some chicken thawed out.  I am so glad I did, this was a great meal to make when you basically have nothing in the pantry or refrigerator.  Simple and delicious – just what I like.  This is a one-pan meal (okay, two if you count the pot for the rice) and I like that even better. Simple ingredients – chicken and broccoli and Asian sauce.  It was a bit like take-out meets homecoooked!

One Skillet Chicken and Broccoli

Ingredients

  • 1 -2 tbsp. olive oil
  • 3 -4 boneless Perdue Perfect Portions skinless chicken breasts, cut into 1-inch pieces
  • salt and pepper
  • 1 bunch broccoli chopped into small florets (about 2 cups or a 12 oz frozen broccoli florets, thawed)

For the sauce:

  • 3 tbsp. reduced-sodium soy sauce
  • 2 tbsp. apple cider vinegar
  • 2 tbsp. honey
  • 1 tbsp. cornstarch
  • 1 garlic clove minced
  • 1/2 tsp. ground ginger

Garnish:

  • thinly sliced green onions
  • 1 tsp. toasted sesame seeds

Instructions

  • Heat 1 tablespoon oil in a large skilett over medium-high heat. Add cut-up chicken and season with salt and pepper. Cook for about 5 minutes until the chicken is browned on all sides and mostly cooked through. (You may need to add the additional tablespoon of olive oil if you have to brown the chicken in batches)
  • To make the sauce: I find it saves time to make this while your chicken is browning. In a small bowl, whisk together the soy sauce, apple cider vinegar, honey, cornstarch, garlic, and ginger until combined. Set aside.
  • Once the chicken is browned, it's time to add the broccoli - stir to combine. Continue cooking for an additional 3 minutes or until the broccoli is bright green and nearly tender.
  • Stir in the soy sauce mixture, and cook for an additional 1 minute until the sauce has thickened and broccoli is tender.
  • Remove from heat and garnish with green onions and toasted sesame seeds. Serve immediately.

    1. Hi Shawna, it makes about 3-4 servings, and if you serve it over rice, you can stretch it a bit more.
