Rainbow Cake

 
 

 

This is a cake my daughter made for her vegan friend and then again for my last birthday.  It is a super easy cake! She dictated the recipe to me.  
 
Ingredients:
 
Two boxes of regular white cake mix
Two 12 oz. cans of Sprite
Food coloring, assorted colors
Duncan Hines Frosting
 
 For a two layer cake, use two boxes of regular white cake mix. Instead of adding the eggs and all the stuff that the box says, just stir in sprite with the cake mix (12 oz. per box of cake). 
 
Separate the batter into smaller bowls, one for each color you want to use. I make six (red, orange, yellow, blue, green, and purple). Mix in the food coloring. 
 
Grease the pans with nonstick spray and then dollop the colored batter evenly into them, in whatever order you want (about three large spoonfuls of each color, in each pan). 
 
Once you have the batter in the pans, do not mix it all together. The cake will look brown and disgusting. 
 
Bake at 350 for about 31 minutes or until you think the cakes are done baking. Let it cool, then assemble it as you would make a normal layered cake. 
 
Frost to taste, Duncan Hines is the only dairy free frosting that I know of.
