These easy-to-make scrambled egg and sausage taquitos are perfect for quick to make and packed with flavor, and will be a hit with everyone. A taquito is a small rolled taco usually with shredded beef or chicken and cheese. Breakfast taquitos are filled with scrambled eggs, sausage, and cheese. Adding sauteed onions and bell peppers are a great addition or you can add other vegetables but keep in mind, they need to be diced small or sliced thin so you can easily roll the tortilla shell. Typically, the taquitos are deep-fried fried but baking them is a healthier option.

No, you can use cooked crumbled bacon, diced ham, or cooked ground breakfast sausage, pork, or turkey.

How to freeze breakfast taquitos

After baking the rolled tacos, allow them to cool and then place them in a freezer-safe container or freezer bag. Store in the freezer for up to 3 months. To reheat, you can place in a 350-degree oven and cook for 15-20 minutes, or until hot.

📃Ingredients

  • 1 12-ounce package of pork or turkey sausage links
  • 1 tablespoon unsalted butter
  • ⅓ cup diced red bell pepper (or whatever color you like)
  • ⅓ cup diced onion
  • 8 eggs, beaten
  • salt and pepper to taste
  • 10 – 12 (6-inch) flour tortilla shells
  • 1 ½ cups shredded cheese

Directions

Preheat oven to 425 degrees. Line a baking sheet with aluminum foil. In a skillet, cook sausage till done, drain off the grease and wipe out the pan. OR, you can grill the sausages till they are cooked through. Set the sausages aside.

In the same skillet, add the butter and let heat on medium heat. Saute the bell peppers and onions until they are softened, about 4 minutes. Add the beaten eggs and scramble them until cooked through. Remove from heat.

Wrap the tortilla shells in a paper towel and place them in the microwave for about 35 seconds, just enough time to warm them so they are pliable. Layer a bit of the cheese down the middle of each tortilla, and add about two tablespoons of scrambled eggs, and a sausage link. Roll up the tortilla shell, place seam side down on the baking sheet.

Spray the tops of the shells lightly with non-stick spray – this will help them crisp up and brown. Serve with salsa for dipping, if desired.
