Last month, I made this delicious Western Omelet Quiche. For this month, I chose to make this delicious Kielbasa, Peppers, and Potato Hash from Mom on Timeout.

This quick 20 minute one skillet meal couldn’t be easier to make.  I used beef kielbasa instead of the turkey and I added some minced garlic.  I will say this, using the beef kielbasa did have a bit more grease when fried but that was an easy remedy; which I explain in the recipe instructions.  We’ve had this a couple of times now for dinner but we actually love this for a weekend breakfast.  We’ve served it with over easy eggs on top of it and also by scrambling eggs into it the hash.  So good! A definite success!

Kielbasa, Peppers, and Potato Hash

Kielbasa, Peppers, and Potato Hash is an easy one skillet meal that comes together in 20 minutes. Perfect for a quick week night dinner or as a weekend breakfast.

Ingredients

  • 2 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 lb potatoes thinly sliced into bite-sized pieces (skin or off)
  • salt and pepper to taste
  • 14 oz beef kielbasa cut into ¼" rounds
  • 1 red onion chopped
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 2 cloves garlic minced

Instructions

  • In a large skillet, heat the olive oil and butter over medium-high heat. Add the potatoes and season with salt and pepper.
  • Cook until browned on one side, 6 to 7 minutes. Turn the potatoes over and cook for another 4 to 5 minutes, or until golden brown and tender. Remove the potatoes from the skillet with a slotted spoon onto a plate.
  • If you are using beef kielbasa, you may not need to add additional olive oil, but with turkey you may need to. Add the kielbasa and cook for 2 to 3 minutes on each side, until lightly browned. Remove kielbasa to a separate plate and pat with a paper towel to absorb some of the grease. Return to skillet.
  • Add the onions and pepper to the skillet and sauté until the onions are soft and translucent and the peppers and tender. Then add the garlic and let cook another minute. Season with salt and pepper.
  • Stir the potatoes back in and let heat back up for another couple of minutes.
  • Taste to see if you need to add more salt and pepper then serve.

    1. Try substituting a can of fire-roasted tomatoes in place of the peppers (or even in addition to.) Or they can do what mine used to do, pick the peppers out lol

  1. That does look tasty! We cook kielbasa often for dinner and I have used it in an kielbasa and apple quiche once so I can totally see it being served for breakfast. Pinned to try.

    1. Thanks Lauren. I grew up on fresh kielbasa and it’s hard to find a “good” fresh one where I live now but the smoked is pretty good.
