How to Make Mini Turkey Meatloaves

Prepare the oven and muffin pan. Preheat the oven to 350 degrees and spray a 12-cup muffin pan with nonstick cooking spray.

Soak the oats. Combine the oats and milk in a small bowl and let them sit while preparing the remaining ingredients.

Mix the meatloaf ingredients. In a large bowl, combine the ground turkey, onion, garlic, seasonings, and¼ cup BBQ sauce.

Add the oat mixture and fill the muffin pan. Stir the soaked oats and milk into the turkey mixture, gently combine everything. Don’t overmix.

Fill the muffin pan and bake. Divide the mixture evenly among the muffin cups, top with BBQ sauce, and bake until cooked through, adding more BBQ sauce near the end of cooking, if desired.

  • 1 ½ cups regular oats
  • 1 cup milk
  • 2 ½ pounds lean ground turkey
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon FlavorGod Everything But Salt Seasoning (or Mrs. Dash's Table Blend)
  • ½ teaspoon ground black pepper
  • ½ teaspoon red pepper flakes
  • 1 cup BBQ sauce (plus more if needed) (We use Sweet Baby Rays)

Instructions

  • Preheat the oven to 350 degrees. Spray a 12-cup muffin pan with nonstick cooking spray. Depending on how big you are making your mini loaves, you may need two pans. Typically I make 12 mini loaves on the larger size but I have made up to 16. Set pan(s) aside.
  • In a small mixing bowl, combine the oats and milk. Stir to make sure all of the oats are covered. Let sit until ready to mix with the turkey mixture.
  • In a large bowl, combine the ground turkey, onion, garlic, FlavorGod seasoning, pepper, red pepper flakes, and ¼ cup BBQ sauce.
  • Add the oats and all of the milk in the bowl to the ground turkey mixture. Using your (clean) hands, combine the two mixtures together. Be sure not to over mix, this will make the meatloaf mixture a bit tough.
  • Using a muffin scoop (or a ¼ cup measuring cup), scoop the turkey meatloaf mixture into each of the muffin cups. Add about a tablespoon of BBQ sauce to the tops of each turkey muffin
  • Bake for about 20 minutes, and then top a little bit more BBQ sauce to the tops of each meatloaf. Place muffin tin back into the oven and let cook for about 10 more minutes, or until done (it may take 15 more minutes depending on your oven). Remove muffin pan from oven and allow to set for about 5 minutes before serving.

  2. I know meatloaf gets a lot of bad press but I love it. It’s like a hamburger but in loaf form and everyone loves a hamburger, right? Your mini versions may be the solution to the disdain, Lisa. They are perfect little individual servings!

    Love the reheatability here, great for snacks, breakfast for my savory preferring hubby and daughter, lunch on the go… I’ll bet they could be done in the grill too so as not to turn on the oven in the summer heat! (Sometimes I just stick the toaster oven outside and use that!)
