Cheesy Broccoli Cauliflower Casserole

This Cheesy Broccoli Cauliflower Casserole is the perfect side dish for any night of the week or to serve with your holiday dinner. Topped with cheese and fried onions, it will be a family favorite in no time.

It’s time to start planning for the holidays and that includes what you’ll be serving your family and guests for dinner. This year may be quite different from past years and the dinner table may have a few less people at it, but you can still serve delicious side dishes with that turkey or ham.

I’m starting off the event with a simple but delicious recipe for a broccoli and cauliflower casserole.  I love using those fried onion pieces on top of casseroles and it was a perfect topper for this casserole.  Not to mention all of that cheddar cheese goodness throughout the casserole and on top.

One of the things I love about making this side dish at the holidays is that you can place in the oven to bake once you remove your turkey. While the turkey is resting, this cheesy casserole will bake in under 30 minutes.  Did I mention that you can prepare this the day before or the morning of when you want to serve it.  Then let the dish come to room temp (about 30 minutes) and then bake as directed.  

This recipe for cheesy broccoli cauliflower casserole use a can of cream of mushroom soup but you totally can make your own condensed soup easily. I will sometimes change out the mushroom for cream of chicken, or cream of celery.  All delicious in this soup.

How to Make Cheesy Broccoli Cauliflower Casserole

Pro Tip: I use frozen broccoli and cauliflower making sure the vegetables are completely thawed out before baking.  Place the bags in the refrigerator the night before and they will be ready to use when you get started.

If you want to use fresh vegetables, steam them first until they are tender-crisp and then rinse with cold water to stop the cooking process.  You don’t want mushy veggies in your casserole.  

Prepare  your 2 quart baking dish by spraying with nonstick spray and preheat the oven to 325 degrees. 

In a large skillet, combine soup, sour cream, one cup of the cheese, and 1 1/4 cups of the fried onions. Add the thawed broccoli and cauliflower, season with salt and pepper, and stir until combined.  Heat over medium-high heat until the sauce is smooth and blended.

Pour the vegetable mix into your prepared baking dish and bake for 25-30 minutes.  Remove from oven and top with the remaining cheese and fried onions.  Pop the dish back into the oven and bake until the cheese is melted and the onions are golden brown, about 5 – 8 minutes.

Ingredients

  • 1 16 ounce bag frozen Broccoli florets, thawed
  • 1 16 ounce bag frozen Cauliflower, thawed
  • 1 can (10.75 ounces) cream of mushroom soup
  • 1 cup sour cream
  • 1/4 cup milk
  • 6 ounces French fried onions
  • 1 1/2 cups sharp Cheddar cheese (save 1/2 cup for the top of casserole)

    What a great idea to add fried onions to the top for a nice crunchy texture. This is one of those casseroles that should be enjoyed all year long.
