I am always trying new ways to use vegetables so my family won’t become bored with the usual steamed or roasted ways. Cauliflower is a favorite for us and while we love the roasted flavor, I love adding it to one-pan meals like this one. Personally, I love cauliflower with a lot of cheese; which is why I decided to make this Loaded Cauliflower Casserole. If I’m being honest, I would have preferred a loaded potato casserole but no potatoes in the house.

Loaded Cauliflower Casserole

If I could serve my family potatoes every night of the week they would be in potato heaven. However, that’s not really doable or healthy so I’ve come up with a way to get all of those flavors from a loaded baked potato that my family loves using cauliflower. It’s a win-win. They get a low carb “potato” with a creamy cheesy bacon filling and I can relax knowing they aren’t eating potatoes all the time.

Using cauliflower in place of potatoes (or even rice) is a healthier option and such a great idea for a low-carb choice. I know you’re saying but how is this recipe healthy with the cheese, cream, and bacon? It’s lower in carbs than using potatoes and cauliflower is full of fiber, Vitamin C, Vitamin K, and Vitamin B’s.

This cheesy cauliflower casserole is great for those on a keto diet or not, it’s just plain good.

Can you use Frozen Cauliflower?

Yes, you can use frozen cauliflower. Whether you’re using fresh or frozen, be sure you steam the cauliflower to fork-tender and don’t overcook it. It will finish cooking in the oven.

Can this Casserole be Made in Advance?

You can make this keto loaded cauliflower casserole in advance and keep it in the refrigerator. Pull the casserole out of the refrigerator and allow it to come to room temperature, about 30 minutes before baking for 20 minutes or until hot through and the cheese is melted.

Ingredients

  • 4 cups cauliflower florets, chopped into bite-sized pieces
  • 6 ounces cream cheese, cut into chunks
  • ¼ cup heavy cream
  • 3 tablespoons unsalted butter, softened
  • ¼ teaspoon garlic powder
  • ½ teaspoon dried dill
  • Sea salt and black pepper, to taste
  • 1½ cups Italian cheese blend, shredded
  • 4 strips bacon, cooked and crumbled
  • 1 tablespoon fresh chives, chopped

How to Make Loaded Cauliflower Casserole

Step 1

Place the top oven rack in the center position and preheat the oven to 400°F.

Step 2

Place chopped cauliflower in a large pot with half a cup of water. Steam cauliflower for around 6-7 minutes, until fork-tender. Remove from heat and transfer cauliflower into a cold water bath to prevent further cooking. Drain well and pat dry with a paper towel.

Step 3

Transfer steamed cauliflower to a large bowl and add cream cheese, heavy cream, butter, garlic powder, and dried dill. Season with salt and black pepper, to taste, and toss to combine.

Step 4

Transfer to an oven-safe casserole dish and top with shredded cheese blend and crumbled crispy bacon. Place in preheated oven and roast until cheese is melted and nicely browned on top, around 8-10 minutes. Remove from oven and serve immediately topped with fresh chives.

Tips, Tricks, and FAQs

  • Substitute Monterey Jack and cheddar cheese for the Italian cheese blend. Or, use your favorite blend of cheeses.
  • If you don’t have cream cheese, you can use sour cream.
  • If you have leftover roasted cauliflower, use it in place of the fresh or frozen.
  • Add broccoli or replace cauliflower with broccoli.
  • Garnish with sliced green onions in place of chives.
