Ohh LaLa Meatloaf

Meatloaf. It just reeks of the 1950’s classic family dinner meal.  Classic as it may be, it is a great standby meal.  So many ways to prepare it and when you find the right combination of ingredients, you’ve got a winner.  The meatloaf can be traced back to the 18th Century, maybe even earlier.  It’s simplicity to make not only makes it the perfect comfort food, but economical.  We don’t have it often but when we do, it just reminds me of family.  Serve it up with baked potatoes (or mashed it you like), and roasted broccoli.  If you have leftovers, they make great sandwiches the next day.  

 

Ingredients:

1 1/2 pounds ground beef
1 egg
1/2 medium onion, chopped
1 cup milk
3/4 cup oatmeal

few leaves of fresh basil, chopped – about 2 tbsp (or 2 tsp dried)
3-4 cloves garlic, minced

3 tsp Italian seasoning
salt and pepper to taste
2 tbsp brown sugar
2 tbsp mustard
1/3 cup ketchup

Directions:

Heat oven to 375 degrees. Spray a 5 x 9 inch loaf pan with non-stick spray.

In a small bowl, combine egg, onion, milk, garlic, basil, salt, pepper and Italian seasonings.  

 
In a large bowl, combine the beef and  oatmeal. Add the egg and milk mixture, combine well.  
 
Shape into the prepared loaf pan. 

In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and spread over top the meatloaf.

 Bake for 50- 60 minutes, or until done.
