I have been craving lemonade lately. We went to the annual Perry Dogwood Festival here in Middle Georgia and one of the vendors was selling fresh squeezed lemonade drinks. I didn’t need a funnel cake or cotton candy – this lemonade drink was perfect. I didn’t even want to share with my husband, but I did.
I went to the grocery store and lemons were on sale, why at this time of the year, I don’t know – but they were. I stocked up not even knowing what I would do with them. Later, as I was putting them in a bright yellow bowl I remembered I could make a few things and choosing would be hard!
But, what to make now?
Then it hit me – SMOOTHIES! I was tiring of the banana-based smoothies for breakfast and lemons would add some zip to them. I found a great lemon smoothie recipe and knew it was exactly what I wanted to drink to start my mornings off. I need a boost when it comes to writing this final research paper for my degree.
This lemon smoothie has more healthy benefits than you would think. Besides the anti-imflammatory help improve digestive systems and help you stay healthy and fight disease. Lemons are full of vitamin C and all kinds of good antioxidants. This drink is a win-win: it’s healthy and delicious!
Tips to making this recipe:
You’ll need a blender for this, any blender will work. I love my Ninja blender and while it’s super old, it works like new.
Greek yogurt can be used, as can coconut yogurt in place of regular yogurt.
Using fresh grated ginger can be used – use 1 tablespoon fresh in place of the ground.
While this recipe makes 2 servings, you can double it as you need it.
- 1 cup ice cubes
- 1 cup low fat vanilla yogurt
- Juice of one whole fresh lemon
- 2 tbsp honey
- ½ tsp ground ginger (OR 1 tbsp grated fresh ginger)
- Zest of one whole lemon, grated
- ⅛ tsp ground turmeric
- In blender, add ice
- Then, add and combine all other ingredients with the ice.
- Blend until smooth. Serve immediately
- Makes 2 servings but I rarely share 🙂
