I don’t know if the crazy heat has hit your area or not this summer, but here’s it has been in the 100’s for days and doesn’t seem like it will be ending anytime soon. It’s too hot cook, be outside, or even move some days. It’s an ice cream day…week…month, if you ask me. Which is why this homemade Reese’s Peanut Butter Cup Ice Cream is aiding in keeping us cool for a bit.

Ice cream always hits the spot on hot summer days, don’t you think? While I love a few different flavors of ice cream, there’s just something about chocolate and peanut butter together in frozen form. I don’t even wait for a summer day to enjoy this recipe.

Reese’s Peanut Butter Cup Ice Cream

This recipe is really is easy to make as it only has 6 ingredients! Most of which you will already have in your pantry or refrigerator. If you’re like me, you’ve probably have a bag of peanut butter cups in the freezer or hidden somewhere. Stock up when Reese’s cups are on sale! Peanut butter lovers understand this!

You will need an ice cream machine for this recipe and this 2 quart one is one of the best that I have found. It’s perfect for making ice cream, frozen yogurt, sorbets, and even frozen drinks. This peanut butter cup ice cream recipe will make about 1 ½ quarts.

Using the ice cream machine, you will have soft serve ice cream in as little as 30 minutes! For firmer ice cream, simply scoop the peanut butter cup ice cream into a loaf pan, like this one. Cover with some plastic wrap and freeze for about 4 hours.

Ingredients

  • ¾ cup creamy peanut butter
  • ¾ cup sugar
  • 2 cups heavy whipping cream
  • 2 cups whole milk
  • 1 teaspoon vanilla extract
  • 1 ½ cup miniature Reese’s Peanut Butter Cups, quartered

How to Make Reese’s Peanut Butter Cup Ice Cream

Step 1

In a large bowl, beat the peanut butter, sugar, milk and vanilla with a hand held electric mixer until blended and creamy. This should take about 5 minutes.

Step 2

Add the heavy cream to the peanut butter mixture and blend until combined.

Step 3

Pour the mixture into your electric ice cream maker and freeze according to the manufacturer’s instructions.

Step 4

When the ice cream is almost completely set, you’ll need to stop the machine to add in the mini peanut butter cups.

Step 5

Cover again and restart the machine and churn until the ice cream is set. It will be the consistency of soft serve ice cream. For firmer ice cream, transfer ice cream to a freezer-safe container, or a loaf pan and freeze for 4 to 6 hours. Serve with extra Reese’s cups and a drizzle of chocolate syrup, if desired.

Makes about 1 quart liquid and about 1 ½ quart frozen.

This is an easy ice cream recipe to make because you just mix the ingredients together and you can put it in your ice cream machine right away.  When it’s almost set, you add in your favorite candies, cookie pieces, etc. and then let it finish doing it’s thing.

Tips, Tricks, and FAQs

  • Crunchy peanut butter can be substituted for the creamy.
  • Easy tip for getting the peanut butter out of the measuring cup: lightly spray the measuring cup with nonstick spray. Your peanut butter will slide right out.
  • Not a fan of peanut butter cups? Add in your other chopped candies (reese’s pieces are great), favorite cookies, or nuts. Or use a combination of your favorites.
  • Just a tip from experience when purchasing an ice cream maker: some brands will require you to freeze the bowl or container 24 hours prior to making ice cream. So be sure to read the directions before starting to make any frozen desserts in your machine.
  • You may be tempted to use 2% milk in this recipe, don’t. This ice cream recipe needs all of that milk fat so using whole is best.
