Over the last couple of years I’ve become addicted to coconutmilk yogurt. I eat it straight from the containers, bake with it, and use it in smoothies.  It’s even a great tenderizer for chicken.  My favorite way to eat this yogurt is in these Fresh Fruit Yogurt Parfaits.  Why you ask? Because I can change up the fruit and granola and have a different breakfast treat or snack every time.

Changing up something that can become “the same ole, same ole” thing is a great idea for kids since it’s back to school time.  They can get bored with the same foods and then just not want to eat them or choose unhealthy foods.

These fruit yogurt parfaits are super simple to make. In fact, they can be prepared the night before and have on hand for breakfast or after school snacks.  “Grab and go” foods are a lifesaver for busy mornings or when the kids are asking for something to snack on.

I hope you enjoy this Back to School recipe and will check out all of the other #OurFamilyTable recipes today.  They can be found after the yogurt parfait recipe!

Tips to make this recipe:

Use fresh in season fruit when available but frozen fruit is perfect to use when it’s not.  Frozen fruit is also great when you are craving fruit that isn’t in season.  If using frozen fruit, you can thaw it out or just add it to the parfaits since it will thaw out pretty fast.

When making the parfaits, layer the bottom of your container with yogurt, and then from there, be your own “yogurt artist” I like to add granola next then fruit and repeat the layers, topping with a little granola.

You can use whatever yogurt your kids like, flavored or plain.  Whether you use regular yogurt or an alternative one, these fresh fruit yogurt parfaits are delicious and healthy.

Take note that granola can be as healthy as you buy or make it.  There are some granola that are very high in sugar, so keep that in mind.

You can make your own granola.  Here are  a few recipes for homemade granola that are great in any type of yogurt parfaits.

Homemade Granola from That Recipe is as easy as 1-2-3 to make, or try Cooking with Carlee’s Toasted Maple Cinnamon Granola with your fruit and yogurt. Of course, you can get a bit fancy with your granola with these two amazing recipes.  Tahini Dark Chocolate Granola from The Baking Fairy or this Pumpkin Pie Chia Granola from Love and Confections.

Prepare the parfaits for your child’s lunchbox easily with a lidded container, whether it’s plastic or glass.  Add a little granola in a resealable bag so it can be added at lunchtime.  The granola can get a bit soft if added to the parfaits.  Not an issue at all, but sometimes that crunch is perfect with the fruit and yogurt.
