Frequently Asked Questions
Firm apples like Honeycrisp, Granny Smith, or Fuji hold their shape well while baking. They soften without turning mushy and balance the sweetness of the brown sugar. Using a mix of sweet and tart apples also works nicely.
The pork should be tender and cooked through with clear juices. An internal temperature of 145°F confirms doneness. Baking covered helps prevent the pork from drying out.
You can assemble the dish a few hours ahead and keep it covered in the refrigerator. Bake it when you’re ready, adding a few extra minutes if it goes into the oven cold. Leftovers reheat well the next day.

I just pulled pork chops out of the freezer, and I have some Honeycrisp apples on hand. This is dinner tonight. Thanks.
I remember going to a cooking class with a friend for fun, and being skeptical of the apple, fennel, onion, and chops. But it was delicious! That was the point I started being open to fruit in my savory dishes.
I showed your recipe to my hubby and he can’t wait to buy the pork chops to make them with apples. He is a pork lover. Has saved your recipe 🙂
When I have time, I make apple sauce to go with pork chops but this baked dish makes the pairing so much easier. Brilliant!
