Spring Sweets Week

Day four of the event with 20 food bloggers from around the country sharing over 75 sweet recipes that are perfect for spring. Have you found any favorites yet? Our annual event is hosted by the lovely Heather, from Hezzi D’s Books and Cooks and sponsored by these truly generous sponsors: Melissa’s Produce, Anolon, Taylor and Colledge, and Selefina Spices.

The participating companies sent us samples and also provided four awesome prize packages for our event! You can read about those prizes here and enter the giveaway at the end of this post, but for now, let me share the recipe for this delicious mango and coconut cake!

What is dragon fruit?

Dragon fruit, also known as pitaya, is one or many tropical fruits and is native to Mexico and Central America. There are a few kinds of the exotic fruit. The more popular is a variety that has white pulp with black seeds. There is also a yellow dragon fruit that has yellow skin and white pulp with black seeds. The less common kind is one with pink or red skin, red pulp, and black seeds. That is the one I am using to make the jam.

Pink or Red Dragon fruit tastes like a cross between a pear and a kiwi and is a low-calorie fruit that is high in fiber and provides a good amount of several vitamins and minerals. It is a great addition to smoothies, fruit salsa, and smoothie bowls, and use it in fruit salads.

Homemade Dragon Fruit Jam

When deciding what to make with the gorgeous pink/deep magenta dragon fruit from Melissa’s Produce, I knew I didn’t want to just use it in smoothies but something more that could be used in a few different ways. Jam came to mind and while I am not a person that needs or wants deeply involved recipes, I knew it had to be easy.

This recipe for homemade dragon fruit jam is beyond easy and only has 3 ingredients. While it doesn’t set up really thick like jams made with pectin, it holds its own just beautifully. With just three ingredients, there are no huge quantities of chemicals, just natural ingredients.

Breakfast time just got even better! This jam tastes delicious on homemade bread, biscuits, and toast. Your peanut butter and jelly sandwich will taste a bit more exotic with dragon fruit jam on it. If you’re an afternoon tea person, slather some of this jam onto a croissant and enjoy. The jam is also a perfect filling with mini-tarts or to spread between two layers of cake. I served it alongside pancakes and it was a hit with that, too. So many uses for homemade fruit jams.

How do you cut a dragon fruit?

Dragon fruit is so easy to cut. One way is to slice the dragon fruit in half lengthwise and use a large spoon to scoop out the flesh from the two halves. Discard the skin of the fruit, or you can use it as a serving vessel as I did with the jam.

The other way is to cut the fruit in half lengthwise and peel the skin from the flesh. Then you can cut the fruit into pieces to use in fruit salads or to eat as is.

Ingredients

  • 1 pink dragon fruit
  • 3 – 4 teaspoons granulated sugar (depending on how sweet you want it)
  • 2 teaspoons fresh lemon juice

How to Make Homemade Dragon Fruit Jam

Step 1

Slice dragon fruit in half lengthwise, and scoop out the flesh, leaving the skin behind. Save the skin to use as a vessel for the cooled jam, if desired.

Step 2

In a medium saucepan, combine the dragon fruit pulp and sugar. Bring to a simmer over medium heat and cook the dragon fruit until it has a jam-like consistency, stirring often to prevent sticking. This will take about 30 minutes. NOTE: if you find it’s not thickening enough after 30 minutes, make a cornstarch slurry (two tablespoons cold water and one tablespoon cornstarch – mix well before adding) and mix it into the jam and allow to cook a bit longer until thickened.

Step 3

Once it’s thickened, add the lemon juice, stir, and continue to cook for two more minutes.

Step 4

Remove from heat and allow to cool completely before transferring to a glass jar with a lid. Store in refrigerator for up to two weeks.

Tips, Tricks, and FAQs

  • When making this gourmet jam it will have some pieces of dragon fruit in it. If you prefer a smoother jam, you can puree the fruit in a food processor before adding cooking it with the sugar in a saucepan.
  • Not thickening enough? Make a cornstarch slurry to add to the fruit mixture, (two tablespoons cold water and one tablespoon cornstarch – mix well before adding) and mix it into the jam and allow to cook a bit longer until thickened.
  • Use the jam on toast, homemade bread, in a sandwich, or as a filling in mini tarts or a jam layer between cake layers.
