It’s Friday, and that means the end of #ChristmasCookies Week. I’m ending the week with a colorful cookie made from a cake mix. Christmas Crinkle Cookies will surely put a smile on your face with their pop of color and then when you taste them, oh so good! On Monday, I shared these Raspberry Shortbread Cookies with an almond glaze and then on Wednesday these Cinnamon Pecan Snickerdoodles made their debut. Tips to Make Christmas Crinkle Cookies:
I used a white cake mix for these cookies and with cake mixes all of the ingredients are already in there for you, but I like to bump up the vanilla in the boxed mixes. Gives it more of an oomph, if you will. Using Adams Best Vanilla Extract gives these cookies such a wonderful vanilla flavor without being too strong.
I recommend using food coloring gel to get the red and green colors, but regular food coloring will work as well. You may have to use more to get the color you desire.
Allow the cookies to cool a minute or two on the baking sheet before removing to a cooling rack.

Christmas Crinkle Cookies
Ingredients
- 1 box white cake mix
- 2 eggs
- 1 teaspoon vanilla
- 1/3 cup vegetable oil
- red and green food coloring gel
- 1/3 cup powdered sugar
Instructions
- Preheat oven to 375 degree and line a baking sheet with a silicon baking mat or parchment paper.
- Mix eggs, oil, vanilla, and cake mix in a large bowl.
- Divide the dough into two equal amounts and place each in a small bowl.
- Add red food coloring to one bowl and green to the other.
- Mix each one till the color is fully incorporated into the dough. I used spoon but you can use your hands as well.
- Refrigerate dough for at least 30 minutes to make the dough a more easy to work with and to get fluffier cookies.
- Using a tablespoon cookie scoop to measure out the dough. Then roll each dough ball in powdered sugar and place on prepared baking sheet. *If you find the dough is too sticky, add about one tablespoon of flour to the dough and work that in.
- Bake for 9-11 minutes at 375 degrees, allow to cool a minute or two on baking sheet before removing to cooling rack.

What can I use to substitute oil?
I haven’t tried it with anything but veg oil. You could use coconut oil or try melted butter, but I have not used either of those to say if it would turn out the same.
Do you use vanilla in the cookies?
Yes, you do. Thank you for catching that – I updated the recipe. It’s 1 teaspoon of vanilla. Sorry I didn’t see the comment earlier.
I took a tip from a recipe for chocolate crinkle cookies that rolled the cookie balls in granulated sugar before coating them in powdered sugar

Which brand of Cake mix did you use? I know that Betty Crocker is now 13.25oz 😣 and Duncan Hines is still 15.25oz I’m assuming it will make a difference with the ingredients you have listed. Thank you ☺️
