Cinnamon Pecan Snickerdoodles
Take a cinnamon-sugar classic cookie and add cinnamon pecans and you get a delicious holiday cookie. Cinnamon Pecan Snickerdoodles are crisp and chewy and have so much flavor from the cinnamon pecans.

I totally love snickerdoodles and my recipe for the cinnamon sugar cookie is quite often requested throughout the year from many family and friends. It’s that good. So, for #ChristmasCookie Week I thought I would take them to another level and add the delicious Cinnamon-Sugar Pecans from Millican Pecan Company to the cookie.
Gotta tell you, the pecans from Millican Pecan Company are so good! I’ve sampled several flavors beside the cinnamon-sugar. I used the cappuccino pecans in these Chocolate Cappuccino Biscotti with Pecans and OH MY, they are so good. Their regular pecans are super good in nearly anything and for snacking.
Sooo – these snickerdoodles are super easy to make and they do freeze well, too. That is, if they last that long.
Tips to Make Cinnamon Pecan Snickerdoodles:
I like to combine and whisk my dry ingredients first when I bake. It’s easier if it’s already mixed when you are ready to add it to the wet mixture. Be sure your butter is softened or it will not incorporate well with the sugar.
The best gadget I have for cookies is a cookie scoop. It will ensure all your cookies are the same size and will bake evenly. Perfect cookies. I use the scoop and then roll the dough into balls. then roll in the cinnamon sugar mixture. This one is my favorite
Be sure to use quality cinnamon too. I love using Adams Best ground cinnamon – it’s the best. I highly recommend it.
Once your dough balls are rolled and ready to bake, I like to flatten them slightly. Don’t worry they will still puff up and crackle.
Allow the cookies to cool on the pan for a minute before removing to a wire rack.

Cinnamon Pecan Snickerdoodles
Ingredients
- 2 3/4 cups all-purpose flour
- 2 tsp cream of tartar
- 1 tsp baking soda
- 1/4 tsp salt
- 1 cup (2 sticks unsalted butter), at room temperature
- 1 1/2 cups sugar
- 2 large eggs
- 3/4 cup finely chopped cinnamon pecans (I used Millican Pecan brand)
Cinnamon-Sugar mixture:
- 2 tbsp ground cinnamon
- 1/4 cup sugar
Instructions
- Preheat the oven to 400 degrees. Line cookie sheets with parchment paper, silicon baking mats, or lightly spray with non-stick spray.
- In a medium bowl, sift together flour, cream of tartar, baking soda, and salt; set aside.
- In the bowl of a stand mixture, combine butter and 1 1/2 cups sugar. Beat on medium speed until light and fluffy, about 2 minutes. Scrape down sides of bowl.
- Add eggs, and beat to combine.
- Add dry ingredients, and beat to combine.
- Fold in (by hand) the cinnamon pecans). Dough will be stiff. I tend to use my hands to fold on the pecans.
- In a small bowl, combine 1/4 cup sugar and the ground cinnamon. Using a 1 1/2 tbsp cookie scoop, form balls of the dough, and roll in cinnamon sugar.
- Place about two inches apart on the prepared baking sheets. Flatten slightly. Bake until the cookies are set in center and begin to crack (they will not brown), about 10 - 11 minutes.
- Allow the cookies to cool on pans for about five minutes before transferring the cookies to the cooling rack.
