Summer salads like this avocado, tomato, and cucumber salad are such a lifesaver when it comes to planning lunches and dinners. I tend to serve this dish for dinner alongside some fresh fruit on nights when I don’t want to heat the kitchen up by turning the oven on. If I am out of fresh avocados then I will make this cucumber and tomato salad with lemon poppyseed dressing. It’s just as refreshing and delicious.

I love this time of the year when you get fresh vegetables and fruits at the Farmer’s Market. It makes me a happy girl when I can make dishes like Tomato, Cucumber, and Avocado Mix or serve this Apple Cranberry Pecan Salad or my summertime Pasta Salad for dinner with leftovers for the next day or two. That saves time and money!

The fresher the ingredients, the better this salad will taste. Opt for ripe tomatoes and avocados for the best flavor. I like to use English cucumbers for my salads because they have thinner skin, fewer seeds, and can be a bit sweeter than regular ones. That said, I have used regular cucumbers many times, I just scoop the seeds out with a spoon before dicing them for salads.

Ingredients

The list of ingredients for this recipe can be found at your grocery store or even a local farmer’s market.

  • cherry tomatoes (or grape tomatoes)
  • English cucumber (or a large regular cucumber, seeded)
  • red onion
  • lemon
  • olive oil
  • salt and pepper, to taste

Directions to Make

Start by rinsing your produce and dry with a paper towel. Next, grab a cutting board and cut the cucumber in quarters lengthwise and then dice and add to a large bowl. Cut the cherry tomatoes in half and add them to the bowl.

Peel and dice the avocados. Discard the pit of the avocado. Add the diced pieces to the bowl. Next, thinly slice the red onions and add to the bowl.

Juice the lemon and add the juice to the salad along with the olive oil. Season with salt and pepper and toss to coat. Chill for at least 30 minutes before serving.

This salad is best the day it is made, but if you have leftovers, you can keep the salad in the fridge for up to 2 days. If you aren’t going to eat it right away or need to store it afterward, squeeze a little fresh lemon juice over the avocados to prevent them from browning. You can also wait to add the avocado until you are ready to serve to be safe!
