Lately, we’ve been making salads to go with our dinner and while my husband can use the same salad dressing (Thousand Island) over and over again, I cannot. I need variety or salad just gets boring. This Homemade Greek Salad Dressing is easy to make in just a couple of minutes and it’s perfect. The fresh flavors from the herbs with the red wine vinegar and lemon juice give the dressing the right amount of zing to keep salads (and me) happy.

I love making salads with fresh vegetables and fruits pairing it with cheese of some kind. For this salad dressing, crumbles of feta cheese are so good in the salad. I tend to make a salad bar for our family. I mix the greens and lettuce together in a large bowl. Chop and prep the rest of the ingredients in separate smaller bowls. Not everyone enjoys onions or kalamata olives in their salad, so this way is perfect for all picky eaters.

Homemade Greek Salad Dressing

Did I mention that this recipe is simple to make? How about that it uses 5 ingredients and can be made in a mason jar or any container with a lid? The fact that this Mediterranean-flavored vinaigrette can be kept in the refrigerator for up to a week makes it a great recipe to double to use some for salad and some to marinate chicken for dinner. That right there saves time!

The best part is using it on green and pasta salads. You can use it on pretty much any type of salad that requires an oil and vinegar-based dressing. Homemade salad dressings allow you to control the amount of ingredients and even the salt content, unlike store-bought salad dressings. If you enjoy the lemon in dressings such as this one, you may also enjoy this Mandarin Orange Ginger Dressing over a simple tossed salad.

Tips, Tricks, and FAQs

  • You will notice there is not any garlic in this recipe and that’s a personal choice. Feel free to add a clove of finely minced garlic.
  • Substitute apple cider vinegar or balsamic for the red wine vinegar.
  • If the dressing has too much tang or zing for you, add a touch of honey to balance that out.
  • Not a fan of Mint? Leave it out, the dressing is still wonderful.
