Easy Blackberry Cobbler Dessert

My last recipe this week for #BerryWeek is one EASY and DELICIOUS fruit dessert.  If you’ve missed the other two I posted this week, check out Strawberry Mousse Dessert and Blueberry Upside Down Cake.  Don’t forget to follow the #BerryWeek tag on social media to see all of our recipes.

My best friend sent me this recipe to make.  In fact, she insisted I make it as she made it several times and it became every meal for her and her hubby for a couple of days. So, it was a no-brainer that I make this cobbler.

How to Make Blackberry Cobbler

There aren’t many ingredients to this dessert, and that makes me happy.

I love recipes using frozen blackberries, or really any frozen fruit.  It makes it easy to use fruit any time of the year for baking.  This cobbler starts with a bag of frozen blackberries.  Easy! You’ll thaw them out for just a quick minute – they’ll still be frozen mostly.

Give the berries a sprinkle of sugar and lime juice.

Then, mixing up the “crust” is simple and uses ingredients that you probably already have on hand.

You’ll distribute the crumbly topping over the berries and then drizzle with melted butter. Bake!

Allow the blackberry cobbler to cool for a few minutes before serving warm with ice cream (optional but highly recommended).

Ingredients

  • 1 12 oz bag of frozen blackberries
  • 1 tbsp fresh lime juice (lemon works, too)
  • 1 tbsp sugar
  • 1 egg
  • 1 cup flour
  • 1 cup sugar
  • 5 1/2 tbsp butter, melted

Instructions

  • Spray an 8 x 8 inch cake pan with non-stick spray. Preheat oven to 350 degrees.
  • Pour bag of frozen blackberries onto a microwave safe plate; defrost for 1 minute. Pour fruit into baking pan.
  • Sprinkle lime juice and 1 tablespoon sugar over berries.
  • In a medium bowl, combine the 1 cup sugar, flour, and egg. It will be a crumbly mix.
  • Distribute the mixture evenly over the fruit.
  •  Melt 5 ½ Tablespoons of butter and drizzle over mixture.
  •  Bake for 20 - 25 minutes, checking to ensure bubbling fruit and a golden-brown top. Remove from oven and allow to cool for a few minutes before serving warm with ice cream (optional but highly recommended)
