Timesaving Tips and Variations
One of the best things about this beach-themed snack board is how easy it is to customize. A few simple swaps can help you use what you already have on hand while still keeping the fun summer look that makes this board stand out.
- Prep the fruit and cheese ahead of time: Slice your kiwi and strawberries the night before and store them in airtight containers; use pre-sliced cheese to save precious prep time so you can assemble the board in minutes right before guests arrive.
- Opt for store-bought shortcuts: Pick up pre-made mini cupcakes from your local bakery instead of baking and frosting your own to get this board ready even faster.
- Swap the cheese and sweets: Customize the flavor profile by swapping the jalapeno Havarti for cheddar, Colby Jack, or Monterey Jack cheese, and replace the Swedish Fish with gummy dolphins, sea creatures, or other ocean-themed candies.
- Mix up your toppings and floats: Add extra fresh fruit like blueberries, pineapple chunks, or watermelon, and create additional pool floats using gummy rings paired with small cookies.
- Fill gaps and add tropical flair: Use pretzels, extra crackers, or a favorite snack mix to fill any small open spaces on the board, and add extra paper umbrellas to give the entire presentation even more tropical flair.
The fun of creating a summer charcuterie board is making it your own. Whether you follow the design exactly or add your family’s favorite snacks, this colorful poolside snack board is sure to bring smiles to the table.

Frequently Asked Questions
You can easily prep the individual ingredients a day in advance. However, it is best to assemble the actual board no more than an hour or two before serving so the crackers and Teddy Grahams stay perfectly crunchy and do not absorb moisture from the fresh fruit.
This design was created on a board measuring approximately 7 by 12 inches. A slightly larger serving tray will also work if you’d like more space between ingredients. The layout can easily be adjusted to fit different board sizes.
If you are serving this outdoors, try to set the serving tray in a shaded area out of direct sunlight. You can also place the entire platter on top of a slightly larger tray filled with ice to keep the cheese and fruit perfectly chilled

How to Make a Pool Party Charcuterie Board
Prep all ingredients by slicing the cheese, creating the kiwi flowers, and halving the strawberries.

Assemble the pepperoni skewers as shown and set aside.

Then cut the Airhead Extremes and place Teddy Grahams inside the Peachy Rings.

Arrange the strawberry flowers and kiwi flowers on the board to establish the tropical design. Place the small bowl of Goldfish crackers near the center. Add the cheese slices and pepperoni skewers. Position the cupcakes toward the lower section of the board and decorate them with Goldfish crackers or Teddy Graham pool floats.

Arrange the gummy sharks, Swedish Fish, Peachy Rings, Airhead pieces, and additional Teddy Grahams throughout the board. Fill open areas to create balance and color. Finish by adding the remaining snacks, placing the paper umbrellas, and making any final adjustments before serving.

Want to make this summer spread even more fun? Try adding my Easy Fruity Watermelon Pizza to the snack table for another fruity option. It pairs perfectly with this ocean-themed charcuterie board and adds a refreshing treat to the summer spread.

Pool Party Charcuterie Board
Equipment
- wooden charcuterie board (approximately, 7" x 12")
- small serving bowl
Ingredients
- 1 kiwi
- 5 – 6 strawberries
- 2 green grapes
- 4 ounces Jalapeno Havarti cheese, sliced
- 8 slices uncured large pepperoni slices (NOTE: use the larger pepperoni slices, not the size for pizza)
- 1 cup Teddy Grahams
- 1 cup Goldfish Crackers
- 4 blue frosted mini cupcakes (check grocery store bakeries or make your own)
- 3 1 ounce boxes Swedish Fish
- 10 Gummy Sharks
- 8 Gummy Peach Rings
- 2 Airhead Extremes
Instructions
Prep ingredients
- Slice the cheese
- Cut the kiwi. Make diagonal slices along the entire center-ish area of the kiwi. For this one we made it slightly under so that the halves were different sizes. Once the cuts meet, gently pull apart.
- Slice the tops off the strawberries, then cut in half down the center.
- Fold the pepperoni in half, then in half again. Stick through a toothpick. Add 4 slices each to two toothpicks.
- Cut the Airhead Extrremes into 4
- Put 8 Teddy grahams into the center of 8 Peachy Rings.
Assemble the board
- Towards the top right, arrange 5-6 strawberry halves to form a "flower" then add a grape in the center. Repeat in the middle left.
- Arrange the larger kiwi half in the top left corner, the other diagonally under it.
- Add the Goldfish to a very small bowl and set between the bottom kiwi and both strawberry flowers.
- Arrange the cheese in a block pattern diagonally from the Goldfish.
- Add a pepperoni skewer under the cheese, and the other next to the kiwis.
- Arrange the cupcakes directly under everything towards the bottom left. Add a few Goldfish on top of a couple. Add a Teddy Graham in Peachy Ring on top of the other two.
- Layer the Gummy Sharks on the left side, under the kiwi, next to the Goldfish bowl and above the strawberry flower.
- Arrange 4 Teddy Grahams in Peachy Rings under the cupcakes and under the cheese.
- Arrange 4 Airhead Extremes on the bottom left half, then top with a Teddy Graham.
- Pile the Swedish Fish on the bottom right.
- Arrange 2 Teddy Graham in Peachy Rings on top of the cheese.
- Arrange the rest of the Teddy grahams between the strawberry flower and the cheese.
- Arrange Gummy Sharks between the kiwi flowers, strawberry flowers and Goldfish Crackers.
- Arrange the rest of Goldfish in the top left corner.
- Arrange 2 Teddy Graham in Peachy Rings on top of the kiwi and shark.
- Stick a paper umbrella into the top kiwi, another into the furthest left cupcake and the last in the top middle cupcake.
