Very Berry Frozen Yogurt Cups

Can I use other flavors of yogurt?

Yes, you can substitute plain yogurt for any flavor you like or even use plain Greek yogurt. Try Strawberry yogurt or my personal choice is vanilla yogurt.

What other fruits can I use?

You can use almost any fruit you like. I don’t recommend watermelon or any melons as they are a high water content fruit and will not freeze well in this dessert. Fresh peaches, mangoes, blackberries, kiwi, dragon fruit, and so many others are great choices.

Ingredients

  • 1 cup oats
  • ¼ cup peanut butter
  • 3 tablespoons pure maple syrup
  • 24-ounce container of plain yogurt
  • 1 ½ cups mixed berries (I used fresh strawberries, blueberries, and raspberries)

Directions

Slice the strawberries in half or quarters – set aside. Then, in a medium bowl, add the oats, peanut butter, and maple syrup and stir with a wooden spoon to combine.

Add a spoonful to the bottom of 12 muffin cups. Press down with a spoon.

Spoon the yogurt over the oat crust and then top with berries. Freeze for 2 hours, or until they’re completely firm. Once frozen, transfer the yogurt cups to an airtight container or resealable freezer bag for storage. They’ll keep well in the freezer for up to two weeks.

Tips and Tricks

  • Choose whatever flavor of yogurt you like. Try coconut milk-based yogurt for a more tropical twist.
  • You can use any nut butter in place of the peanut butter. Try almond butter or cashew butter!
