This Baked Oatmeal with Blueberries is naturally sweetened with real ingredients and loaded with fresh fruit. Prepared the night before and baked in the morning, this healthy and delicious breakfast will be loved by all.

In recent years, I’ve been adding more oatmeal to my diet, not because I all of a sudden love it; but for health reasons. I am not a fan of a bowl of oats by any means but I do what I need to. That all changes now with THIS healthy Baked Oatmeal with Blueberries.

It’s not even like eating a bowl of oatmeal but more like a slice of cake. Now, not cake like you are thinking but a delicious square of a warm fruity granola bar. THAT I can get behind any time of the day.

Baked Oatmeal with Blueberries

The best part of this baked oatmeal besides the yummy taste and health benefits is that you can prepare it the night before and then pop it in the oven first thing in the morning. Breakfast will be ready in about 35 minutes. This is great for busy mornings! While you are getting the kids ready for school, breakfast is doing its thing in the oven.

I used fresh blueberries but you can choose whatever fruit you prefer, fresh or frozen. A mixed berry blend is next on my list to use in this baked oatmeal recipe. If you love apples, give this baked Apple Cinnamon Oatmeal a try.

I’ll list the substitutions for some of the ingredients later in this post, but I chose to use what I had in the pantry. Using pure maple syrup (not pancake syrup) gave it a bit more sweetness and kept the sugar lower by using unsweetened applesauce. Cutting sugar where you can is a good thing and maple syrup has its own benefits.

Can I use different fruits?

Yes, you can use different fruits other than blueberries. Diced apples, raspberries, strawberries, blackberries, and even sliced bananas.

What type of milk can I use?

I used one percent milk, but you can use whole or even skim milk. For a non-dairy option, coconut, almond, oat milk, soy, and even cashew kinds of milk are all delicious in this recipe.

Can I prepare this and bake it right away?

Yes, you can prepare this baked oatmeal and then bake it right away. To do that, use Quick Oats in place of the Old Fashioned. Let it sit for about 10 – 15 minutes while the oven is preheating. The only difference is that it won’t be as cake-like but it will still be delicious.

How do you store leftover baked blueberry oatmeal?

Store leftover baked oatmeal in the refrigerator and reheat it in the microwave. Leftovers can also be cut into squares, individually wrapped, and frozen. Then, for quick yet satisfying breakfasts, just pull a piece out of the freezer and microwave it until heated through.

Ingredients

  • 2 cups Old Fashioned Oats (not Quick Oats)
  • ¾ cup milk (I used 1%)
  • 1 cup unsweetened applesauce (sweetened is okay to use)
  • ¼ cup chopped walnuts
  • 2 eggs
  • ¼ cup pure maple syrup (not pancake syrup)
  • 2 teaspoons vanilla extract
  • 1½ teaspoons ground cinnamon
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 2 cups blueberries (fresh or frozen)

How to Make Baked Oatmeal with Blueberries

Step 1

Gather your ingredients and a large mixing bowl. Add the oats, milk, applesauce, eggs, maple syrup, vanilla extract, walnuts, cinnamon, baking powder, and salt in the large bowl. Mix well with a wooden spoon.

Step 2

Spray a 7″ x 11″ baking dish with nonstick cooking spray. Spread half of the oatmeal mixture in the casserole dish (a little more than 1½ cups). Top that with about ¾ of the blueberries.

Step 3

Spread the remaining batter over the blueberries carefully. Be sure not to mash any of the blueberries open. The juices can turn the oatmeal a grey color. Add the remaining blueberries to the top of the oat mixture.

Step 4

Cover with plastic wrap and chill the dish in the refrigerator overnight (or for at least 8 hours). Check the tips for baking right away tips.

Step 5

To bake the oatmeal: Uncover and allow the dish to come to room temperature while the oven is preheating (350 degrees). Bake uncovered for about 30 – 35 minutes, or until the top is golden brown. Allow it to rest for five or so minutes before you slice and enjoy.

Tips, Tricks, and FAQs

  • A 9×9 inch baking dish can be used, cook time will need to be increased by 5 – 10 minutes.
  • Fresh or frozen fruit can be used, no need to defrost if frozen.
  • Substitute milk for any dairy-free milk alternatives.
  • Use chopped pecans in place of walnuts.
  • To make this sugar-free, omit the maple syrup and use Splenda or Stevia.
  • In place of the maple syrup, you can use brown sugar.
  • Want a bit more sweetness? Add a drizzle of maple syrup.
  • Make individual portions by baking in a muffin tin.
  • To bake without chilling: use Quick Oats in place of the Old-Fashioned Oats. Let it sit for about 10 – 15 minutes while the oven is preheating. The only difference is that it won’t be as cake-like but it will still be delicious.
