Beefy Peanut Butter Chili and Incredible One Pot Cooking Review

This hearty chili is packed with beef and a secret ingredient – peanut butter! Beefy Peanut Butter Chili is rich with flavors, creamy, and delicious.
My family loves chili especially on cold or rainy days. The spicier the better for some of the family members. I prefer a milder chili so when I make it, I tell them to add their extra seasonings to their portions. Making chili is even better if it’s a one-pot meal so that clean up is a cinch for me.
One-pot meals are just about the best thing ever, my friends! What’s even better than that is an entire cookbook filled with one-pot meals! That’s exactly the kind of cookbook that Megan Marlowe, from Strawberry Blondie Kitchen wrote. I was thrilled to get the chance to review this delicious book and even more excited to see a chili recipe that was different than the one I make to try. Before I tell you more about the chili recipe, let me share my thoughts on the cookbook.
Incredible One-Pot Cooking
Just as the name suggests, the recipes in this book are all incredible and cook in ONE POT. There are recipe sections with meaty classics, seafood, pasta, and soups. Meals for days!
I wasn’t even sure which recipe to start with to make! So many sounded mouth-watering delicious and had me drooling. After thumbing through the book the first time, I was ready to make such recipes like: Loaded Tortilla-Crusted Chicken Finger Nachos, Crab Rangoon Hot Dish, Philly Cheesesteak Stuffed Shells, Chicken Noodle Pho, and Loaded Sausage Pierogi Soup.
Throughout the book, Megan has gorgeous pictures of nearly every recipe and easy to follow instructions with helpful tips. If you are looking for quick, delicious, and easy recipes to make (who isn’t?), then this is THE book for you. In the end, I decided to let my daughter choose which recipe to make from the cookbook. The only stipulation was that I had to have the ingredients in the house. She choose perfectly with the Beefy Peanut Butter Chili. It intrigued both of us with the addition of peanut butter but it was a perfect addition to a classic recipe. The chili was creamy, spicy, and simply delicious. I was a bit hesitant to let my husband in on the secret ingredient, he’s a simple man and chili is not the dish to be changing up with him. As he was finishing the first bowl, he commented that it was indeed delicious and proceeded to have another. We did tell him about the peanut butter and he just keep eating that second bowl. Winner!

Let’s Make Beefy Peanut Butter Chili
The easiest tip for this recipe is to have all of your vegetables chopped and ready to go. Open all the cans and containers before starting to cook the chili.
Once you have the ground beef and veggies cooked, simply add the tomato paste and peanut butter stirring until it’s combined and smooth. Then add everything else except for the beans. Give it all a good mix and let the whole delicious pot of chili simmer for about 30 minutes. Add the beans and cook for another 10 minutes. Done! Add your favorite chili toppings.
Beefy Peanut Butter Chili
Ingredients
- 2 tbsp olive oil
- 1 lb ground beef
- 1 medium green bell pepper, coarsely chopped
- 1 medium yellow onion, diced
- 2 garlic cloves, minced
- 1 medium jalapeno pepper, seeded and diced
- 2 tbsp chili powder
- 2 tbsp ground cumin
- 1 tbsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp ground cinnamon
- 8 oz tomato paste
- 1/2 cup creamy peanut butter
- 1 tbsp Worchestershire sauce
- 1 can (15 oz) diced tomatoes, undrained
- 3 cups low sodium beef stock
- 1 can (15 oz) pinto beans, drained and rinsed
Instructions
- Heat one tablespoon of olive oil in a large Dutch oven over medium-high heat. Add the ground beef and brown.
- Once ground beef is browned, add the bell pepper, onion, garlic, and jalapeno and cook until softened. About 5 minutes.
- Add the chili powder, cumin, oregano, salt, pepper, and cinnamon. Stir in seasonings well with the beef mixture.
- Add the tomato paste and peanut butter, stirring in until combined. Let cook about 2-3 minutes before adding the Worchesterhire sauce, tomatoes, and stock.
- Simmer for 30 minutes, then add the beans and allow chili to cook for another 10 minutes. Serve and enjoy!
