The Best Slow Cooker Chili ever! Slow cooking the chili perfectly combines all the spices, beans, tomatoes, and meat to create a delicious bowl of goodness.

Chili season is among us.  You know it’s time to make the spicy concoction when you walk outside and say “hmm, it’s chilly out here.” Yes, that was bad; but seriously, the perfect time to make chili is when there is a chill in the air.

Years ago when we were stationed in Arkansas we would get together with friends on Sundays to watch football and catch up after the week.  On some of these Sundays, the guys would gather in the kitchen (yes the guys) to make chili.  They would make two batches – one extremely hot and the other “normal”.  I think it must have been a game with them to see who would cry first as they tasted it.  Milk was always on hand to extinguish the spiciness of the chili.  Fun times!

Over the years, I have tried many chili recipes and I finally nailed it for our family.  The right mixture of everything and it has a kick to it but it won’t make you run for the milk.  I use my easy to make homemade chili seasoning mix and some staples from the pantry and refrigerator and let it all simmer in the crockpot throughout the day.  Serve it up with the toppings of your choice and some cornbread.

 This slow cooker recipe for chili makes a a full six quarts; plenty for a crowd watching the game or leftover for the next day and it will freeze well.

How to Make the Best Slow Cooker Chili Ever

Grab a large skillet and over medium heat, brown the ground beef.  Add the onion and green bell pepper when ground beef is just about cooked through. Saute for about 5 minutes or until the onion is tender and meat is cooked through. Add the garlic and let cook about 2 more minutes. Drain grease. Place meat mixture in the crockpot. My slow cooker insert can be used on the stove-top which saves on a pan to wash.

Add the rest of the ingredients (minus the toppings) to the crockpot. Mix well and taste to see if you need to add more seasoning. Cover and let cook for about 4-5 hours on low.

Serve with your favorite chili toppings: cheese, sliced green onions, sour cream, etc. We enjoy serving cornbread or these Cheesy Chili Muffins.

Ingredients

  • 2 pounds ground beef
  • 1 medium onion chopped
  • 1 medium green bell pepper chopped
  • 2 cloves garlic minced
  • 1 can 15 oz PLUS 1 can (8 oz) tomato sauce
  • 1 can 14.5 oz diced tomatoes
  • 1 jar 8 oz salsa I used mild but use what you like)
  • 2 tbsp Homemade Chili Seasoning Mix add more of less to taste
  • 2 cans 15 oz light red kidney beans
  • salt and pepper to taste
  • Toppings: shredded cheese green onions, sour cream, etc)

Instructions

    Strangely enough, I’ve never made chili in the slow cooker! It’s the kind of dish made for a slow cooker. Love the cheese and green onion on top. I’m a little bit addicted to green onion.

      Once you make it in the slow cooker, you’ll wonder why you haven’t before! I love green onions too and the only one in the family that does. I like to regrow mine because the big bunch from the store always goes bad before I can use them all.
