Welcome back to year 6 of our Festive Christmas Event where we team up with a bunch of talented blogging friends to bring you a plethora of creative ways to celebrate your holiday season. Today, it’s a Christmas Cookie recipe that is a Double Chocolate Mint Cookie made from a Cake Mix. So simple and easy to whip up a batch. I shared the recipe for this one as a gift to give in this post. These cookies are addicting. Soft, chewy, and packed with chocolatey mint flavor.
How to Make Double Chocolate Mint Cake Mix Cookies
Preheat oven to 375 degrees. Spray baking sheet with nonstick spray. Set aside.
In a large mixing bowl add the cake mix (just the dry cake mix), 1/4 cup unsweetened cocoa powder, 1 cup chocolate chips, 3/4 cup mint chocolate pieces. Give it all a stir to combine.
Add the 1/2 cup melted butter and 2 eggs. Using a wooden spoon, mix until combined. Scoop by rounded tablespoons onto prepared baking sheet. Bake 7 – 8 minutes or until edges are set and the tops have started to crack.
Remove from oven and cool a few minutes before removing cookies to cool completely on wire rack.
