Using a pizza cutter or sharp knife, cut the puff pastry into 5 strips and then each strip into fourths.
Roll 1 little sausage in each puff pastry rectangle. Pinch at the seams. Place seam side down onto the baking sheet at least one inch apart. Repeat until all sausages are wrapped.
Brush each roll with the egg wash and then sprinkle everything bagel seasoning onto each.
Bake wrapped sausages in preheated oven for 15-20 minutes, or until puff pastry is golden brown. Remove sheet pan from oven and serve while warm. If desired, serve with dipping sauces like cheese dip, honey mustard, Dijon mustard, or barbeque sauce.
