Recently I was sent a box of Erewhon’s Gluten-Free Brown Rice cereal to try.  I’m going to confess, I am not on the brown rice train when substituting it for white rice. I can tolerate it if it’s in a casserole or the like but on it’s own – I’ll pass.  That being said, brown rice CEREAL is a whole other goodness!  I had a bowl of this cereal for breakfast and it was so delicious!

Reading the box (while eating the cereal), I noted that Erewhon’s Brown Rice cereal is not only gluten-free but organic as well.  The good people at Erewhon blend whole grains of California-grown organic brown rice with gluten-free organic brown rice syrup and sea salt to enhance the natural flavor of the whole grain. The brown rice is then cooked until it’s puffy and that’s it.  I mean there are only 3 ingredients in this cereal – simple, goodness, and healthy for you.

The timing of this box of cereal couldn’t have been better! I was going to make oven-fried chicken for dinner but didn’t have anymore Panko breadcrumbs left.  Instead of finding the pizza delivery menu, I decided to use Erewhon’s Brown Rice cereal.  I mean I’ve used corn flakes for the coating on chicken before so this was pretty much the same.

This Gluten-Free Italian Breadcrumb recipe is super easy and takes only a couple of minutes to mix up in your food processor or blender. The breadcrumbs taste amazing and work just like regular breadcrumbs in all of your favorite recipes.

I blended the remaining cereal (I only ate about one cup) from the box in small batches in my equally small food processor until they resembled the consistency of Panko breadcrumbs.  I put the crushed cereal in a large bowl, added spices and seasonings and mixed them all together.

Done! That easy!  I filled a large mason jar and with what was left, I used as a coating for my oven-fried chicken.  You simply measure the Gluten-Free Italian Breadcrumbs as you would the regular ones for any of your favorite recipes.  I baked the chicken as usual and they turned out fabulous! The coating was crispy and the chicken was moist and tender.  I can’t wait to try the breadcrumbs in other recipes now.

Homemade Gluten-Free Italian Bread Crumbs

This Gluten-Free Italian Breadcrumb recipe is super easy and takes only a couple of minutes to mix up in your food processor or blender. The breadcrumbs taste amazing and work just like regular breadcrumbs in all of your favorite recipes.

Ingredients

  • 1 box 10 oz of Erewhon's Gluten-Free Brown Rice cereal
  • 1/2 cup dried parsley
  • 1/3 cup dried basil
  • 1/3 cup dried oregano
  • 1 1/2 tsp garlic powder
  • 1 tsp pepper
  • 1/2 tsp red pepper flakes

Instructions

  • In small batches, blend cereal in a food processor or blender until it resembles the consistency of Panko breadcrumbs. If desired, you can pulse the cereal a bit finer.
  • Place crushed cereal in a large bowl.
  • Add in the rest of the ingredients to the cereal in the bowl. Mix by hand with a wooden spoon.
  • Store in a large mason jar or an airtight container.
  • Use in any recipe calling for breadcrumbs in a 1-to-1 ratio.

Notes

If you do not have a food processor, you can use a large resealable bag and a rolling pin to crush the cereal. Works just as well!
