Italian Sausage Stuffed Shells

These Italian Sausage Stuffed Shells are one of my easy dinner ideas when you want a baked pasta dish that feels a little more special than your usual weeknight meal. It’s rich, comforting, and works well for family dinners or casual get-togethers.

Stuffed shells with ricotta and sausage always seem to bring everyone into the kitchen. There’s something about that bubbling pan coming out of the oven that makes people grab a plate and sit down for dinner.

Growing up, sometimes my dad would make Italian Sausage Stuffed Shells for Sunday dinner, and I always thought they looked like such a chore to make. There seemed to be so much prep, not to mention all the dishes afterward. Once I started making them myself as an adult, I realized they really aren’t that hard to put together, and the prep is pretty minimal.

They’re still a Sunday dinner recipe for my family, especially when we want a change from my recipe for the Best Spaghetti and Meatballs. I usually serve the shells with my Homemade Rosemary Bread so there’s something to soak up all that extra sauce.

Italian Sausage Stuffed Shells

Sausage stuffed shells are a hearty baked pasta dish with a creamy cheese filling, plenty of sauce, and melted mozzarella over the top. The Italian sausage adds plenty of flavor without needing a lot of extra ingredients.

Using jarred pasta sauce saves time, and the sausage can cook while the shells boil. Once baked, the shells are easy to scoop from the casserole dish and serve.

Timesaving Tips and Variations

There are several ways to make this recipe a little easier. Some of the prep can be done ahead of time. A few simple ingredient swaps can change the recipe without adding more work.

  • Cook the sausage while the jumbo shells boil to save preparation time.
  • Keep a few extra cooked shells on hand in case some tear while filling them.
  • Use pre-shredded mozzarella to cut down on prep.
  • Choose mild, sweet, or hot Italian sausage depending on the flavor you prefer.
  • Substitute ground beef or ground turkey for the sausage.
  • Use marinara, tomato basil, or another favorite pasta sauce.
  • Add crushed red pepper flakes to the filling for a little heat.
  • Prepare and assemble the casserole earlier in the day, then refrigerate until ready to bake.
  • Use a zip-top bag with one corner snipped off to make filling the shells easier.
  • Broil the finished casserole for 2 to 3 minutes if you like lightly browned, bubbly cheese.

If the assembled casserole has been refrigerated, it may need a few extra minutes in the oven. These simple changes make it easy to adjust the recipe to your schedule and what you already have in the kitchen.

What to Serve with Stuffed Shells

This pasta dish is rich and filling, so simple sides work well with it. A fresh salad or vegetable adds something lighter to the meal, while bread is perfect for any sauce left on the plate.

You don’t need much on the side since the shells are already filling. A salad, vegetable, or bread is plenty for most meals. Choose one or two depending on what you’re serving.

Do I have to cook jumbo shells before stuffing them?

Yes, the shells need to be boiled before adding the filling. Cook them according to the package directions until tender, but avoid overcooking them because they will continue cooking in the oven. Drain them well and let them cool slightly before filling.

This recipe uses simple ingredients that are probably staples in your pantry or refrigerator. The ingredients are easily found in grocery stores, too.

  • Jumbo Pasta Shells: Large shells that hold the filling.
  • Italian Sausage: Adds plenty of flavor to the filling.
  • Pasta Sauce: Used in the filling and over the shells.
  • Mozzarella Cheese: Adds plenty of melted cheese throughout.
  • Ricotta Cheese: Gives the filling its creamy texture.
  • Parmesan Cheese: Adds a little extra cheesy flavor.
  • Italian Seasoning, Garlic Powder, Salt, and Pepper: Simple seasonings for the filling.
  • Fresh Parsley: For garnish before serving.

How to Make Italian Sausage Stuffed Shells

Cook the jumbo shells according to the package directions, then drain and set aside. Brown the Italian sausage in a skillet, breaking it apart as it cooks.

Mix the cooked sausage with the ricotta, Parmesan, half of the mozzarella, seasonings, and 2 cups of pasta sauce.

Fill the shells, arrange them in a sauce-lined casserole dish, then top with the remaining sauce and mozzarella.

Cover and bake at 350°F for 30 minutes. Uncover and bake another 20 to 30 minutes, then garnish with fresh parsley.

Ingredients

  • 24 jumbo shells
  • 1 pound Italian sausage
  • 5 cups pasta sauce
  • 3 cups mozzarella cheese shredded
  • 15 ounces ricotta cheese
  • 3 tablespoons parmesan cheese
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon pepper
  • ¼ teaspoon salt
  • Fresh parsley for garnish

Instructions

  • Preheat the oven to 350°F. Cook the jumbo pasta shells according to the package directions until tender. Drain well and set them aside until cool enough to handle.
  • While the shells are cooking, add the Italian sausage to a medium skillet over medium heat. Cook until browned, breaking the sausage into small pieces as it cooks. Drain any excess grease if needed.
  • Spread enough pasta sauce over the bottom of a 9×13-inch casserole dish to lightly cover it.
  • In a large bowl, combine the cooked sausage, ricotta cheese, Parmesan cheese, half of the mozzarella, Italian seasoning, garlic powder, pepper, salt, and 2 cups of the pasta sauce.
  • Spoon the sausage and cheese mixture into each cooked shell. Arrange the filled shells in the prepared casserole dish in a single layer. Pour the remaining pasta sauce over the shells and sprinkle the remaining mozzarella cheese over the top.
  • Cover the casserole dish with foil and bake for 30 minutes. Remove the foil and continue baking for another 20 to 30 minutes, or until the cheese is melted and the casserole is hot and bubbly. If desired, broil for 2 to 3 minutes to lightly brown the cheese. Sprinkle with chopped fresh parsley before serving.
