- 1 teaspoon baking powder
- 1/2 teaspoon baking soda

- 1 egg
- 1 cup milk

Directions
Preheat oven to 400 degrees. Spray mini muffin pan with nonstick spray. In a skillet, brown the sausage over medium heat until cooked through. Place cooked sausage crumbles onto a paper towel lined plate to absorb the extra grease.
In a medium bowl, whisk together the flour, baking powder, baking soda, and sugar. In a small bowl whisk the egg and then add milk and melted butter.
Add the wet ingredients to the flour mixture and combine. Divide the batter in half and and in one half add cooked sausage to make the mini pancake muffins with sausage. Add the mini chocolate chips to the other half for chocolate chip mini pancake muffins.
Pour pancake mix into mini muffin pans and bake for 8 minutes. Remove from oven and allow to cool for 1-2 minutes before removing from pans.
Serve with warm maple syrup or your favorite jams.
