This hearty sheet pan dinner is already a weeknight win, but there are a few ways to make it even easier or adjust it to suit your preferences. Whether you want to cut down on prep or try new ingredients, these tips will help.

  • Slice the peppers, onions, and carrots and store in an airtight container in the refrigerator.  You can cut up the potatoes and place them in a large bowl of cold water and keep them in the refrigerator without them turning brown.  Just drain before using.
  • Swap Italian sausage links for chicken sausage, kielbasa, or a hot sausage links.
  • Add other quick-roasting vegetables like zucchini, cherry tomatoes, broccoli florets, or halved Brussels sprouts for more texture and variety.
  • Spice it up with red pepper flakes or swap in a smoky paprika blend for extra flavor

A few simple swaps or shortcuts can tailor this recipe to your tastes while keeping it just as satisfying. Don’t be afraid to mix in seasonal veggies or change up the protein based on what you have on hand.

Pro Tip:

Sometimes, if I know it’s going to be a busy day, I’ll prep the vegetables in the morning (or the night before) and store them in the refrigerator until it’s time to make dinner. This way, when I am combining the vegetables and sausage with the dressing, I am only dirtying one bowl.

How to Make Sheet Pan Sausage Dinner

Preheat oven to 425 degrees. Spray a large baking sheet with nonstick spray. In a mason jar or use a small bowl, whisk olive oil and Dijon mustard together. Add the rosemary, garlic, Parmesan, Italian seasoning (crush between fingers to refresh the flavors), salt, and black pepper (to taste), shake the closed jar until well combined.

All of the dressing ingredients, including olive oil, Dijon mustard, and fresh rosemary, are added to a mason jar and ready to be mixed.

Add the cut sausage pieces, potatoes, carrots, peppers, and onion to the baking tray. Pour the dressing over the sausage mixture and toss until everything is coated. I find using my hands easier to get everything coated. Spread everything evenly on the pan.

Bake 30-45 minutes until sausage is cooked through and potatoes are golden and tender. Give it a stir once or twice during the baking time to help the sausages and vegetables to evenly brown and not stick to the pan. Serve and Enjoy.
