Our taco nights are much like a buffet with all the fillings and toppings in bowls that are passed around the table family style. Recently, I changed it up these Rotisserie Chicken Quesadillas by creating a quesadilla buffet. Everyone told me their must-haves for their oven-baked tortilla melts. I had taco meat, pulled pork, and shredded chicken for the protein. My homemade guacamole was requested as was this Mexican Street Corn. Everyone had different ideas for customizing their tortillas. It was such a fun dinner!

  • Cooked and crumbled bacon
  • Green chiles
  • Shredded cheese
  • Sliced jalapenos
  • Guacamole
  • Sour cream
  • Pico de gallo

Directions to Make Quesadillas

It’s super easy to make these; the only direction is how to bake them in the oven. Preheat the oven to 400 degrees. Prepare 2 large baking sheets by lining them with aluminum foil. Place tortillas on the baking sheets.

Top one half of each tortilla as desired and then fold in half. Place the sheet pan in the oven and bake for approximately 20 minutes or until crisp and golden. Use the broiler to crisp the shells up if they aren’t to your crispness.

    Now that’s a nice way to do quesadillas! I always get so tired of frying them up one at a time and then nobody eats together. But I do love them and would like to make them more often!

    1. So slow one at a time for sure. I love using the oven now to make them and I can eat with the family.
