I am in love with this recipe for several reasons.  It’s Paleo, healthy, simple to prepare, and delicious to eat – several ways!  Before I tell you about the yummy ways you can serve this tangy BBQ pulled pork, let me just say any recipe I can use my crock pot for, gets two thumbs up and this one is just that.

We’re having a cold snap here in middle Georgia – it’s COLD.  Oh, believe me when I say, I know it’s really not cold compared to the rest of the country BUT for us, it’s COLD.  I am a Pennsylvania-girl so I do understand this weather is “warm” – ha! So, I just want to stay by the fireplace with my cup of tea and not worry about dinner.  Crock pot meals it is!

I love this homemade Paleo BBQ Sauce; it’s filled with all things good and spicy.  The spices and seasonings in the sauce are most likely ones you already have in your pantry.  The recipe makes a lot of BBQ Sauce but the good news there is that it will keep fresh in your refrigerator up to a month in a sealed container.  I use it on nearly everything, chicken, burgers, salads, dip baked potato wedges in it, etc.  It’s that good.

Typically, my family rolls their eyes when I mention “Pork is for dinner!” They aren’t fans.  I know, crazy!?!? It’s my fault, really. I never knew how to cook pork without it being so dry and gross – until a few years ago.  The husband will eat it now, with less eye rolling and I even get a nod of approval.  But, this, this Pulled Pork recipe – game changer! We absolutely love it!!

Ways to Serve Tangy BBQ Pulled Pork

I mentioned ways to serve it so here goes:  For Paleo diets:  serve the tangy BBQ pulled pork as is, or over riced cauliflower, or spoon it into a baked sweet potato.  If you’re not eating Paleo, by all means, serve this delicious meat in a toasted roll, spoon over a white baked potato or rice.  It doesn’t matter; really, it’s so good on its own.

Ingredients

Pulled Pork:

  • 1 3 - pound lean pork loin
  • 1 medium onion sliced
  • Salt and pepper to taste
  • 1 ½ cups of Paleo BBQ Sauce recipe below
  • 2 cloves garlic minced

Recipe for Paleo BBQ Sauce:

  • 3 cups of unsalted beef broth
  • 4 -5 cloves garlic minced finely
  • 2 can tomato paste 6 fl oz each
  • 4 tbsp Dijon mustard
  • 2 tbsp apple cider vinegar
  • ½ cup raw honey
  • 4 tsp paprika
  • 2 tsp onion powder
  • 2 – 3 tsp chili powder depending on your tastes
  • 1 tsp cumin
  • 1 tsp sea salt
  • 1 tsp cayenne pepper

Instructions

To make the Tangy BBQ Sauce:

  • In a medium saucepan, bring unsalted beef broth and garlic to a simmer on medium heat for 5 minutes.
  • Then, add the tomato paste, Dijon mustard, apple cider vinegar, maple syrup, paprika, onion powder, chili powder, salt, and cayenne pepper. Whisk to combine.
  • Simmer on low heat for 25 minutes, remove from heat and let cool for about 20 minutes. The sauce will thicken during cooking time.
  • Whatever sauce is not used in the Pulled Pork can be stored in the refrigerator for up to a month in a sealed container.

To make the Pulled Pork:

  • Spray crock pot with nonstick spray (this will aid in clean-up).
  • Season pork loin with salt and pepper.
  • Place onion slices on bottom of crock pot. Top with pork lion. Then sprinkle the 2 cloves of garlic over the pork.
  • Pour 1 ½ cups of prepared Tangy BBQ Sauce over pork.
  • Cover and cook on low for 8 -9 hours, checking at about the 6 hour to see if it’s ready to be shredded. You’ll know when it is – it will just fall apart. When it is fork tender and falling apart, shred pork and return to crock pot. Let cook another hour. Depending on your crock pot, the cooking time can vary.

To Serve:

  • If eating Paleo, serve as is or spoon into a baked sweet potato or over riced cauliflower. If not eating Paleo, spoon into rolls. Also, great over a white baked potato.

Notes

Note: If you think you need more of the BBQ sauce, add it at the point when you are shredding the meat.
