Carrots just seem to taste better and sweeter when they are slow cooked. I love this recipe and it’s a wonderfully easy one to make to go with any weeknight dinner or holiday dinner. The buttery, sweet, and spiced glaze cooks to perfection and the carrots are tender and moist.
Pro Tip: Leftovers can be cooled and packed into a freezer container – freeze to have on hand for a week night side.
Because you are using a slow cooker, this recipe frees up your oven just about if you are making them for a holiday dinner.
How to Make Slow Cooker Glazed Carrots
Grab your slow cooker and place 3 bags (12 ounces each) of baby petite carrots in the bottom.
In a medium microwavable bowl, melt the 1/4 cup butter. Whisk in the 1/3 cup light brown sugar, 1/4 teaspoon cinnamon, and 1/8 teaspoon nutmeg.
Pour mixture over carrots and toss to combine. Set the slow cooker on high for 3 hours or until the carrots are tender. Give the carrots a good mix to coat with the glaze before serving.
