This treat is addicting. You know, just like the saying about potato chips – “you just can’t eat one” – that applies
to these wonderfully sweet cinnamony (Yes, I declare that a word) pecans. This gets thumbs up from my family and they go fast! The candied pecans are also quite tasty on top of a salad too.
2 lb pecan halves
2 egg whites, beaten
1 cup granulated sugar
2 tsp vanilla extract
2 heaping tsp ground cinnamon
Preheat oven to 225 degrees.
In a large bowl, whisk the egg whites till they are frothy. You can use the whisk attachment on a stand mixer to do this step but it really only takes about a minute or two by hand.
Fold in pecan halves until they are completely coated with the egg white mixture.
Line a large baking sheet with parchment paper.
Pour pecans onto parchment paper and bake in the oven for one hour, stirring pecans every 15 minutes. This will prevent the nuts from sticking together and ensure that they are all coated with the cinnamon-sugar mixture.
