How to Make Thanksgiving Leftover Egg Rolls
I like to start by having all the tools and ingredients out on my countertop. In a medium bowl, mix the turkey, stuffing, and potatoes.
Place two heaping tablespoons of mixture onto the center of an egg roll wrapper. In a small bowl, beat the egg. Brush the beaten egg on the edges of the wrapper.
Fold the bottom corner up to the center of the filling. Then fold the two side corners into the center.
Finally, fold and roll the top corner down, enclosing the egg roll, and place in the air fryer basket, do not crowd. Spray lightly the tops of the wraps with non-stick spray. Cook at 375 degrees for 10 minutes on one side and 3 on the other side; make sure you spray each side with cooking spray.
Remove and let cool for a few minutes before eating. Dip in cranberry sauce or gravy.
