Made in the air fryer, they’re crispy, light, and delicious, giving you all the satisfaction of fried food without the guilt.

Timesaving Tips and Variations

  • Get creative with your egg roll fillings. Add roasted green beans or whatever vegetable you have.
  • Add some Slow Cooker Cheesy Green Bean Casserole to them.

Can you Freeze Uncooked Egg Rolls?

Yes, you can freeze them. First, line a baking sheet with parchment paper or wax paper. Then, place the uncooked rolls on the sheet pan leaving some space between them. Flash freeze until firm, then place them in an airtight container or freezer safe bag and store in the freezer for up to four months.

To cook them: Place frozen rolls into the air fryer at 375 degrees for about 10 – 12 minutes or until golden brown and hot. Turn them over at the halfway point.

How to Bake Egg Rolls in the Oven

If you don’t have an air fryer, simply bake the leftovers in the oven. Preheat the oven to 425 degrees. Place the rolls on a baking sheet and bake for 15 – 20 minutes, turning halfway through the time.

Ingredients

The ingredients for this recipe are your typical leftover food from a big holiday feast. As mentioned in the tips section, you can use what you have. The egg roll wrappers can be found in the produce section with the tofu and bear the ready-made dips and sauces. Any Asian market will have them, too.

How to Make Thanksgiving Leftover Egg Rolls

I like to start by having all the tools and ingredients out on my countertop. In a medium bowl, mix the turkey, stuffing, and potatoes.

Place two heaping tablespoons of mixture onto the center of an egg roll wrapper. In a small bowl, beat the egg. Brush the beaten egg on the edges of the wrapper.

Fold the bottom corner up to the center of the filling. Then fold the two side corners into the center.

Finally, fold and roll the top corner down, enclosing the egg roll, and place in the air fryer basket, do not crowd.  Spray lightly the tops of the wraps with non-stick spray. Cook at 375 degrees for 10 minutes on one side and 3 on the other side; make sure you spray each side with cooking spray.

Remove and let cool for a few minutes before eating. Dip in cranberry sauce or gravy.
