Blood Orange and Cardamom Bundt Cake
Blood oranges are only in a season for a short time and I take advantage of using them in smoothies and fruit salads plus eating them as a snack. I can’t resist that beautiful red, orange skin and the slightly tart and wonderfully sweet taste.
I used spices from Selefina in this recipe and vanilla bean paste from Taylor & Colledge.
Using the juice and the zest of the blood orange in this cake along with the warm spices of cardamom and cinnasational spice blend gives this cake the best entrance to welcoming Spring and saying goodbye to Winter.
🥣Equipment
- 10 cup bundt pan
- KitchenAid Mixer (or electric hand held mixer)
- Measuring cups and spoons
- Large mixing bowl
- Medium mixing bowl
- Citrus juicer
- Citrus zester
📃Ingredients
For the cake:
- 3 cups flour
- 3 teaspoons baking powder
- 3/4 teaspoon baking soda
- 1/2 teaspoon cardamom from Selefina Spices
- 1/4 teaspoon Cinnasational Spice Blend from Selefina Spices
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated white sugar
- 1/2 cup brown sugar, packed
- 3 tablespoons blood orange zest
- 1/4 cup blood orange juice
- 3 large eggs
- 1 teaspoon Taylor and Colledge Vanilla Bean Paste
- 1 cup sour cream
Blood Orange Glaze
- 1/3 cup blood orange juice
- 1/2 teaspoon vanilla bean paste
- 1/8 teaspoon cardamom
- 2 1/2 cups powdered sugar
Directions
For the cake:
Preheat oven to 350 degrees. Grease a 10-cup bundt cake pan with butter and then flour the pan. I don’t recommend using nonstick spray for this recipe. Set aside. Zest and juice the oranges and measure out what you need for the cake and the glaze. Set aside until needed.
In a medium size bowl whisk together the flour, baking powder, baking soda, cardamom, cinnasational spice, and salt. Set aside.
Using a stand mixer and a large mixing bowl, cream the butter and both sugars until light and fluffy about 2-3 minutes. Add in the eggs, one at a time. Beating well after each addition. Mix in the orange zest, vanilla, and orange juice until thoroughly combined. Alternating between the dry ingredients and sour cream, add them to the butter and sugar mixture. Mixing until just combined.
Pour the batter into the prepared bundt pan. Bake for 45-50 minutes, or until a toothpick inserted in the cake comes out with just a bit of crumbs on it. Remove from oven and cool on a wire rack for 10 minutes in the bundt pan before turning out from the pan and cooling completely. Glaze with the blood orange glaze.
For Blood Orange Glaze:
In a medium bowl, whisk all of the ingredients for the glaze together until smooth. The consistency should be easy to pour but thick. Add more powdered sugar, or more blood orange juice to make it the right consistency. Drizzle over the cake.
