Bunny Butt Cupcakes Recipe

I totally wished I made these Easter Bunny Butt Cupcakes with the cute decorations when my girls were young, but you know what? Better late than never, right?! These are just super fun to make and eat!

Who can resist cute little bunny tushies with yummy white chocolate and vanilla frosting on top of a vanilla cupcake? This recipe looks as if the Easter bunny has just jumped right in to enjoy the cupcake, frosting and all! Too cute to eat? No way! The cupcakes would make a wonderful dessert for any Spring-themed event!

Adorable Bunny Butt Cupcakes

Many of the bunny butt cupcake recipes that I have seen use frosting, a mini marshmallow, or fondant to make the bunny butt and feet. Some also use melted white chocolate, which is what I choose to use along with this bunny butt mold.

For the cupcakes, you can use a cake mix, as I did, or make homemade cupcakes, or even storebought works. I really don’t think it matters the flavor either, lemon or chocolate cupcakes sound yummy to me, too. As for the frosting, canned is perfect (and easy), or you can make this delicious cream cheese frosting. No matter if you use shortcuts or not, these will be the cutest Easter cupcakes ever.

I like easy when it comes to decorating baked treats, like these Bunny Oreo Balls. I am by far not a cake decorator and love to use molds, sprinkles, or anything clever to make my treats stand out. Check out these adorable candy bunny feet and this bunny cupcake decorating kit I found online after I made these cupcakes. I made a note to order some next year! I will say, sometimes I find the premade candy decorations a little hard to bite into, so use them with caution.

Equipment you may need

  • Large bowl and electric mixer (I’ve had this one for over 15 years!)
  • Medium bowl to melt the chocolate chips in
  • Cupcake liners
  • cupcake pan
  • Bunny butt ice cube mold
  • Pastry brush or unused clean paint brush
  • Ziplock bag or pastry bag or small bowl

Ingredients

  • 15.25 ounce box vanilla or white cake mix
  • 1 ¼ cups water (for cake mix)
  • ½ cup vegetable oil (for cake mix)
  • 4 egg whites (for cake mix)
  • 16 ounce can vanilla frosting
  • ¼ cup pink candy melts
  • 22 ounces (2 – 11 ounces bags) white chocolate chips
  • 1 cup shredded coconut flakes

How to Make Bunny Butt Cupcakes

Step 1

Preheat the oven to 350 degrees. Line your cupcake pan with paper liners.

Step 2

Prepare cake mix: In a large mixing bowl, add the cake mix, water, oil, and egg whites.

Using a hand held electric mixer, mix the ingredients until combined well, about 2-3 minutes, on medium speed.

Step 3

Divide the cake batter between the 24 paper-lined muffin cups, and transfer to the oven. I like to use this scoop. Bake for 12-15 minutes, until a toothpick inserted into the center comes out clean.

Step 4

Cool cupcakes completely before decorating. While the cupcakes are cooling, melt the candy melts, according to the package directions.

Step 5

Use the pastry brush to add melted candy to the bunny tail and each bunny foot area in the bunny butt ice cube mold.

Step 6

Melt half of the white chocolate, and fill the rest of the bunny butt molds with the white chocolate. Freeze for 30 minutes, to set the chocolate. Remove from the mold. This mold only has 10 cavities, so you will need to repeat this process 3 times, or use 3 molds.

Step 7

Add the coconut to a ziplock baggie, then add 10 drops of green food coloring. Close the bag, and shake until the color is blended. Alternatively, you can add the coconut and food coloring in a small bowl and mix it that way.

Step 8

Frost the cupcakes with the white frosting. Add a bunny butt to the top of the cupcakes.

Step 9

Coat the rest of the exposed frosting of the cupcakes in a generous portion of green coconut, tipping the cupcakes, and shaking off any excess coconut. Store cupcakes in an airtight container. Enjoy!
