Funfetti White Chocolate Blondies
Soft and Chewy Funfetti White Chocolate Blondies are filled with sprinkles and white chocolate chips. Easy to make and fun to serve at any gathering or just to snack on.
I do love a good brownie, but there’s just something about a blondie that I love more. These funfetti white chocolate blondies are made from scratch and so fun. I am not sure what I love more about them, the sprinkles or the cake batter taste of the blondie. Maybe both. They definitely were a winner in the house as they were GONE in no time. Such a great recipe for a sweet treat.
I’m celebrating the blondie today, along with my fellow Festive Foodie bloggers. We’re keeping the cocoa powder and the semi-sweet chocolate chips in the pantry and showcasing the fun blondies can have.
Funfetti White Chocolate Blondies
This new recipe for white chocolate funfetti blondies is super easy and quick to make. The biggest decision you may have to make is what color sprinkles to use. I like to use rainbow colored jimmies for this recipe. The jimmies, or sprinkles won’t melt or bleed into the batter as the non-pareils may do. Change up those sprinkles to match the theme of your party or event.
For this blondie recipe, I used Ghirardelli white chocolate chips and Rodelle Vanilla extract in this recipe. Both products give the blondies a richer and more decadent flavor.
What’s the difference between a brownie and a blondie?
Both are classified as cookie bars but there is a difference. Brownies are rich and have a fudgy texture when using cocoa powder or melted chocolate. Blondies skips the cocoa powder, adds more vanilla extract, and uses more brown sugar that adds moistness, chewiness, and a rich molasses flavor. Some recipes also will call for brown butter to make the blondies. If you love these blondies, you may want to try these peanut butter blondies or these Biscoff Blondies. Ingredients
- melted butter
- light brown sugar
- white granulated sugar
- eggs
- vanilla extract (I love this one)
- all purpose flour
- baking powder
- salt
- white chocolate chips (these are my favorite)
- rainbow sprinkles, or jimmies
How to Make Funfetti White Chocolate Blondies
Step 1
Preheat your oven to 350°F and line a 13″ x 9″ baking pan with parchment paper. Leave some hang over the edges for easy removal; set aside.
Step 2
In a medium bowl, combine the flour, baking powder, and salt. Set aside.
Step 3
In a large mixing bowl, whisk together the melted butter, brown sugar, and white sugar until well combined. You can use a hand mixer if you would like. I prefer to use a whisk as this is an easy recipe to whip up.
Add the vanilla extract and the eggs, whisk until fully incorporated.
Step 4
Add the flour mixture into the wet batter and mix until just combined. Fold in the white chocolate and the sprinkles.
Step 5
Pour batter (it will be thick) into your prepared baking pan. Spread batter evenly and top with extra sprinkles.
You may need to lightly spray your hands with non stick cooking spray to help spread the batter evenly as it is thick.
Step 6
Bake for 25-30 minutes, or until the top is set and lightly brown. Remove from oven and cool completely before cutting. Blondies will keep in an airtight container for up to 3 days, or refrigerated for up to a week.
