Grilled Pork Chops with Dijon Herb Sauce

My family isn’t a huge fan of pork chops, they claim they are boring, dry and flavorless.  I guess that has been my fault over the years as I would only make them one certain way. I didn’t know any other way but I have learned to doctor them up now and have added a few other ways to make them to my recipe file.  The family still isn’t big on them but they have since stopped telling me they don’t like them as much.  This pork chop is grilled and then a flavorful sauce is drizzled over it, or you can have your chop plain too.  
 

Ingredients:

4 boneless pork loin chops
1/4 cup olive oil
2 1/2 tablespoons soy sauce
1 teaspoon steak seasoning (such as Montreal Steak Seasoning or make your own*)

Directions:

Mix olive oil, soy sauce and steak seasoning ingredients in a small bowl and pour into a one-gallon resealable plastic bag. 
 
Add the pork chops and set the bag in a baking dish in a way that the pork chops lay flat and remember to flip the bag over halfway through the marinating time. 
 
Marinate in the refrigerator for 3-8 hours (no more than 8). 
 
Heat the grill to medium and grill the chops 6-8 minutes per side (depending on how thick they are) until they are no longer pink in the center. 
 
Remove the chops from the grill and tent them with foil and allow them to rest for 5-7 minutes. If desired, slice the chops in 1/4 to 3/8 inch slices across the grain and serve.
 

Dijon Herb Sauce

Ingredients:

1 tsp butter
3 tbsp chopped onion
3/4 cup fat free chicken stock
1 tbsp dijon mustard
2 tbsp chopped, fresh herbs like parsley, chives

Directions:

Add the onion to the pan and cook, stirring, until soft, about 3 minutes. 

 
Add the stock and boil until it reduces to 1/2 cup, about 3 minutes. 
 
Stir in the mustard, herbs, and 1/8 tsp pepper.
 
Put the chops on a platter and pour the sauce over the meat.
