The irresistible taste of Mexican Street Corn, also called Elote, lies in the seasoning. It’s a perfect mix of spices that can take a simple ear of corn and turn it into a delicious treat. This Elote seasoning blend is the right mix of smoky, sweet, and a little spice for grilled corn.
We love serving this Mexican-style seasoned corn with this 30-Minute Beef Taco Skillet or Grilled Steak Fajita Foil Packets. Mexican Street Corn Seasoning Recipe
Making your own Mexican Street Corn Seasoning is simple and takes like 5 minutes to mix up a batch. The key spices typically include chili powder, cumin, smoked paprika, garlic powder, salt, and a few others. To me, the flavors are close to a chili seasoning with a few extra spices.
These seasonings are sprinkled over grilled corn and then slathered with a rich and creamy mixture called Mexican crema. Sometimes Cojita cheese is crumbled over top, too. The Elote seasoning can be mixed into the cream for even more flavor.
Whether used on corn, sprinkled over veggies, or mixed into dips, this seasoning is sure to become a new favorite.
Timesaving Tips and Variations
- I like to double the recipe and store it in a mason jar.
- Check the expiration date of your spices and herbs. You want to make sure you have the freshest ingredients.
- If you don’t care for cilantro, leave it out.
- I used dried lemon zest when I made it as that is what I had but dried lime zest is great in this, too. While you can buy both of those, it’s easy to just zest the citrus, leave it out, and let it dry on its own to use in recipes like this.
- The list of ingredients is to my tastes, but if you prefer it less spicy or more adjust the spices as needed.
- You can also control the amount of salt used.
- This seasoning mix is also great to use in place of taco seasoning.
It’s best to use high-quality spices and herbs for any seasoning blend you want to make. Oftentimes, buying in bulk isn’t worth it unless you are making several batches of different homemade seasonings.
How to Store Elote Seasoning
If you are adding the Parmesan cheese to the mix, store the blended spices in an airtight container for up to 2 weeks. However, if you leave out the Parmesan cheese, you can store the seasoning blend in your pantry for up to a year.
Ways to Use Mexican Street Corn Seasoning
This seasoning can be used for more than grilled corn. Use it as a seasoning for other vegetables, add it to roasted potatoes, or sprinkle over popcorn. We love to add it to our scrambled eggs or French fries.

How to Make Mexican Street Corn Seasoning
Using a medium bowl, combine all of the ingredients and whisk to mix. If you are using the seasoning right away, you can use fresh lemon or lime zest. If you are going to be storing this, allow the zest to dry out before adding to the mix and storing.
Be sure to store the mix in the refrigerator for up to 2 weeks if you are adding the Parmesan cheese. Longer shelf life is achieved by omitting the cheese and storing the mix in the pantry. Add the Parmesan when you are using the mix in a recipe.
Avoid storing your spices and dried herbs near a heat source, like the stove or over the refrigerator. The heat from your stove can degrade spices over time.
