These potatoes make a great side dish to any meal.  A nice change from the ordinary baked potato. This would also be good as an appetizer or game day snack.  Serve it up with your favorite loaded potato skin topping.  Don’t skimp on the quality and amount of Parmesan cheese you use, it makes all the difference!  Super easy to make!

Ingredients:

6 small Russet potatoes, scrubbed and cut in half
1/4 cup butter
1/2 to 3/4 cup of good grated or finely shredded Parmesan cheese
garlic powder to taste
Italian Seasoning, or your favorite seasoning

Instructions:

Preheat oven to 400 degrees.

Melt butter and pour into a 9×13 inch pan and spread evenly across the bottom. I place the pan in the oven while it is preheating to melt the butter. This saves a dish to wash!

Generously sprinkle Parmesan cheese and lightly sprinkle other seasonings all over the butter.

Place potato halves face down on the butter and seasonings.

Place in preheated oven and bake for 40 to 45 minutes.

Cool for 5 – 10 minutes before removing from pan. Very important to let them cool those 5 – 10 minutes so that the Parmesan and seasonings stick to the potatoes. If desired, serve on a plate with a side of sour cream for dipping.
