Stove-Top Garlic and Herb Pot Roast

 

 

I love a good pot roast and if it’s an easy, no fuss recipe all the better.  Normally I will make the roast in my crockpot but there are times when I simmer the roast in all it’s deliciousness on the stove-top.  This is one simple recipe that has many options for the side dishes.  Typically you see potatoes, carrots and onions cooking along side with the roast but I like to change it up a bit.  This was one of those times!  I served this garlic and herb roast with Roasted Potatoes and Roasted Green Beans with Garlic.  The sides were a perfect compliment to the roast and the whole meal was outrageously good.  Of course you could also serve it with Mashed Potatoes and Honey Glazed Carrots and it would be just as wonderful.

 
Ingredients:
 
3-4 lb roast (I often use 2.5 lbs and the type of beef is entirely up to you. I use whatever cut was on sale that week)
1 pkg onion soup mix
1 pkg garlic and herb soup mix
2 cups of warm water
1 sprig of fresh rosemary
2-3 tsp of minced garlic
1-2 tbsp olive oil
salt and pepper to taste
 
Instructions:
 
Trim fat from roast and season with salt and pepper.  Heat olive oil in a large pot or Dutch oven over med-high heat.  Add garlic, let heat for about 30 seconds, add roast and brown well on all sides.
 
Mix the two seasoning packets with the 2 cups of warm water and pour over roast.  Toss in the rosemary sprig. Bring to boil and then cover.  Reduce heat to simmer and let cook until roast is tender.  Usually about 3-4 hours depending on the size of your roast.
 
You can thicken the juices up with a tablespoon or two of flour.  Remove roast, cover with foil and then add the flour to the pot, whisking till smooth.  Let thicken and then serve with roast.
 
Optional – If desired, the last 30 -45 minutes of cooking time, add cut up potatoes and carrots.  Raise heat up to medium and cook till potatoes and carrots are tender.
