Cucumber and Onion Salad

Sometimes you just want one or two servings of a dish that usually makes more and when you are the only one who really enjoys said dish, you don’t want to waste it.  This cucumber and onion salad is that for me.  Actually it’s a slimmed down version of the actual salad that I grew up with.  My Dad would make the classic cucumber and onion salad with the sour cream dressing and it was one of my favorites, still is to this day.  He would go through the process of slicing the cucumbers and onions paper-thin with the hand-held grater and then squeezing the water out of the cucumbers – a crucial step in this salad so that dressing isn’t watered down.  I can almost taste it now! Yum! Once he had it all mixed, it had to be chilled, a hard concept for me because I wanted it right then.

I’ve made this salad a few times and of course when you live with sour cream haters, you think “more for me!”  Well, yes and no.  I feel I waste the “labor of love” on just myself by doing as my Dad did, squeezing the water from the vegetable, taking the time to hand slice the cucumbers and waiting for it to chill.  Don’t get me wrong, I ate it and ate it.  It was wonderful!  But, no matter how you think about it, sour cream isn’t all that good for you so I have been making a similar salad without the sour cream and I can make it in a single serve amount, well more like two servings.  There is no squeezing the water out of the cucumbers in this recipe as it comes together quickly and only needs 30 minutes to chill.  If you were to make this earlier in the day for dinner that night, then yes, you may want to take that labor of love step.  I still have haters in the group as they don’t care for the vinegar smell but now when I think “more for me”, I can really eat it and not worry.  This is my healthier version of my childhood favorite, there is just something about the cucumber and onion combo that is wonderfully good.

Ingredients

  • 1 cucumbers peeled and sliced thin
  • 1/2 onion sliced very thin
  • 1/8 cup of a good olive oil
  • 1/8 cup of red-wine vinegar
  • garlic powder to taste
  • freshly ground pepper to taste
  • 2 tsp. Italian seasoning
  • add salt to taste if you feel the need to (I never do)

Instructions

  • In a bowl, combine all the ingredients and mix well.
  • Chill for at least 20 – 30 minutes before serving. This will make about 2 servings.
