Delicious Grilled Peaches with Blueberry Syrup #StoneFruit

Grilled Peaches with Blueberry Syrup are made with simple ingredients and full of flavor. They make the perfect light summer dessert.

Grilled Peaches with Blueberry Syrup

Sometimes the best recipes are ones that you just do in the spur of the moment.  That’s exactly how these Grilled Peaches with Blueberry Syrup came about.  From a recent trip to our local peach orchard I had still had peaches on hands.  I sliced several and frozen them for pies and smoothies.  Even with doing that we had quite a few left to eat and the last few were starting to become a little too ripe.  I decided to grill them and serve them with vanilla ice cream. 

But that plan didn’t happen. No ice cream! What?

I did have blueberries that I was going to use for a syrup to top pancakes so – plan B!

Make a delicious blueberry syrup to spoon over the grilled peaches.  Perfect!

Tips for Making Grilled Peaches with Blueberry Syrup:

This recipe couldn’t be simpler to make.  If you have a grill, indoor grill, grill pan or a skillet, you can grill peaches.  It’s a quick recipe to make and the blueberry syrup is easy to do.

Choose peaches that are ripe so that they will grill up fast and be tender and juicy.

I use melted coconut oil to brush on the cut side of the peaches before grilling them.  You can also use vegetable oil.  

Grilling the peaches is super easy, preheat your grill and then add the peaches cut side down first.

Once you have nice grill marks, turn them over and let the peaches cook for a couple more minutes till tender.

When making the blueberry syrup, simply add the ingredients for it in a saucepan; mix and bring to a boil.  Then simmer for a few minutes until the syrup is thickened.  Using the back of a wooden spoon, mash a few of the berries against the side of the pan so they burst open.  

Once the syrup and peaches are done, spoon the syrup over the peaches and serve.  That’s it.  If you have vanilla ice cream, by all means add a scoop to your plate with the peaches and blueberry syrup.

Ingredients

  • 2 peaches cut in half and pitted
  • 1 tbsp coconut oil melted (or vegetable oil)
  • 6 oz pkg of fresh blueberries
  • 1 tsp lemon juice
  • 1 tbsp raw honey
  • 3/4 tsp cinnamon
  • 1 tbsp butter

Instructions

  • Preheat grill to medium. Brush peach halves with coconut oil.
  • Grill peaches cut side down for a couple of minutes, or until you have nice grill marks. Flip over, and grill for about 2-3 minutes, or until fruit is tender.
  • While the peaches on the grill, prepare the blueberry syrup. In a medium saucepan, combine the blueberries, lemon juice, honey, cinnamon, and butter. Over medium heat, bring to a boil and then let simmer until sauce is thickened.Using the back of a wooden spoon, mash a few of the berries against the side of the pan so they burst open.
  • Once the peaches are grilled, remove to a serving plate and spoon blueberry syrup over them.
  • Serve warm.
