Summer’s here, and the oven feels like the enemy. But who says pizza has to be hot and cheesy? This Watermelon Fruit Pizza is a refreshing twist on a classic and is perfect for a pool party, a light weeknight meal, or even a fun activity with the kids.

This watermelon pizza bursts with juicy fruit and a delicious sweet drizzle that takes it over the top. It’s healthy, it’s easy, and it’s guaranteed to be a crowd-pleaser! Serve it with this fruit charcuterie board or these delicious fruit and rice krispie treat kabobs.

Watermelon wedges are topped with a simple cream cheese glaze and a variety of fresh fruit.  What’s not to love?! It’s a perfect last-minute dessert to take to a summer cookout or have for dessert after a nice dinner.  This sweet fruit dessert is also a fun and sneaky way to get kids to get more fruit.

Using a ripe, juicy watermelon for this recipe will provide the sweetest results. They’re in season from May to September but at their peak in July and August. Slicing the watermelon into thick slabs will get a few “pizza crusts” and then top each with different fruits you love. You can garnish it with a few mint leaves to make this fruit dish pop even more.

How Do You Keep Fruit Pizza from Getting Soggy?

As the watermelon used for the base of fruit pizza, it can tend to become more watery over time as it sets out too long. I recommend that you make this dessert just before serving. Otherwise, it may appear like the dish is soggy if it’s set out too long.

How to Store

This fruit dessert pizza is best served and eaten fresh. However, if you have leftovers, you can refrigerate them for two to three days. Any longer and the watermelon will get soggy and too watery. Be sure to cover the leftovers tightly with plastic wrap or store them in an airtight container. Freezing leftovers of this dish is not recommended as watermelon doesn’t freeze well.

⏰Time-Saving Tips and Variations

  • I used raspberries and blueberries as I was serving this for a Memorial Day dessert but that’s not the only fruit or way to create your watermelon pizza.
  • Just like a fruit salad, many fruits go well together. Try using: blackberries, sliced strawberries, pineapple, mango, grapes, kiwis, cherries, dragonfruit, peaches, nectarines, and plums.
  • If you prefer to prep this treat ahead of time, I recommend prepping all the ingredients separately and storing them in air-tight containers. Then assemble the watermelon pizza before you serve it.
  • I recommend that you cut the watermelon slice into wedges BEFORE adding the cream cheese glaze and fruit. If you put it on first, you’ll end up needing to clean your knife before each cut and you will have messy-looking wedges.
  • Omit the cream cheese glaze and use a vanilla yogurt or coconut yogurt base as the “sauce” and then top with your fruits and a few mint leaves.
  • Watermelon and feta cheese pair well together. Add a bit of crumbled feta with the fruit toppings.
  • Use whipped cream as the base in place of the cheesecake drizzle, a drizzle of honey, and then top with choice of fruits.
  • Skip the cream cheese icing and drizzle the finished dessert with chocolate or caramel sauce.

  • 1 round slice of watermelon (1 – 1½ inches thick)
  • 4 tablespoons cream cheese, softened
  • 4 – 5 tablespoons heavy cream
  • 4 teaspoons fresh lemon juice
  • ½ teaspoon vanilla extract
  • ½ cup fresh raspberries
  • ½ cup fresh blueberries

Directions

You will want to make sure you have a large sharp knife to cut a 1 – 1 1/2 inch slice of watermelon. It’s best to make your first cut into the watermelon just to the left of the center of the fruit, and then gauge the one inch you will need before making the second cut.   Cut the thick slice into 6 even wedges. Set aside.

Using a handheld mixer, combine the softened cream cheese, heavy cream, fresh lemon juice, and vanilla extract in a small mixing bowl.

Drizzle the glaze over each wedge of watermelon. Top the pizza with the raspberries and blueberries. Serve and enjoy!
