Have you ever seen a picture of a cookie (or any recipe) and thought – “this MUST be in my life”? Well, that is exactly how I felt when I saw this cookie on Sally’s Baking Addiction. I mean, just look at it, filled with white chocolate chips and cranberries – you can tell that it is one rich and delicious cookie, too. Not to mention, this cookie is soft, just like Mrs. Field’s soft baked cookies – and they stay soft even two days later.
Sally uses dark brown sugar in this recipe and has a secret ingredient that she shares with her readers – cornstarch. I had never heard of adding cornstarch to cookie recipes, but it does make sense when you want a soft, thick and chewy cookie. The possibilities for this cookie dough are endless too. You can tailor the add-ins to your liking. Whatever you do, remember her hints about chilling the dough and not dropping cookie dough onto hot cookie sheets. Also, I love that this recipe can be frozen and then you can just plop those dough balls onto a cookie sheet and in few minutes you will be in a small part of heaven.
