Slow Cooker Everything Seasoning Pot Roast
This slow cooker everything seasoning pot roast is cooked with fire-roasted tomatoes and onions. Using an easy seasoning mix, this tender beef roast turns out delicious and moist every time.
I love my slow cooker and I really need to use it more often than I do. Some days, dinner isn’t even a thought until 30 minutes before someone asks, “what’s for dinner” and I have to scramble to come up with something. There are days when I do plan ahead and this recipe for slow cooker pot roast is one of them.
When I tell the family pot roast is on the menu, they immediately think of our favorite perfect melt-in-your-mouth pot roast slow cooked in the oven or this tender favorite beef roast made in the Crock Pot.
This time I wanted to slow cook the chuck roast I bought on sale with my new favorite seasoning obsession, Everything Seasoning from FlavorGod. Totally love just about all of their spices and seasoning mixes. This particular one is amazing and it also comes in a no salt added mix, which is the one I used for this roast.
The seasoning mix isn’t your “bagel everything seasoning” mixture, but has fresh herbs combined with mild, warm chili peppers and garlic. Totally perfect for nearly anything.
I also pulled a can of fire-roasted tomatoes out of the pantry to add to the slow cooker. The smokiness of the tomatoes adds so much flavor to the meat. This slow cooker pot roast recipe is the easiest.
How to Make this Slow Cooker Everything Seasoning Pot Roast
You’ll want to trim your beef roast of all visible fat. If you’re using a chuck roast, make sure it has some marbling – this marbling of fat makes for the most delicious tender meat. Honestly, if I can’t find a chuck roast, I’ll use whatever cut of roast I can find since it will be slow cooking to a fork-tender wonderfulness.
Season both sides of the roast with about one tablespoon of Everything but Salt Seasoning (or if you prefer to use salt, use the Everything Seasoning mix). Place roast in slow cooker.
Slice a medium onion on the thick side, toss in slow cooker along with 2-3 cloves of garlic and one can of fire-roasted tomatoes.
Set slow cooker to LOW and let cook for 6-8 hours (or High for 4-6 hours), until meat is tender and falls apart. I like to shred the meat but you definitely can serve it in large pieces.
What to Serve with Pot Roast?
We like to serve Mashed Potatoes with pot roasts. Spoon the delicious juice and tomatoes over the potatoes – just so good. Here are a few other sides that are wonderful with pot roasts.
Smashed Roasted Potatoes – roasted baby red potatoes smashed and topped with olive oil and rosemary.
Roasted Green Beans with Fried Onions – roast up some green beans with olive oil, salt and pepper and top fried onions
Cheesy Smashed Brussels Sprouts – take those Brussel Sprouts to the next level by roasting them instead of steaming.
Air Fryer Parmesan Roasted Potatoes – crispy on the outside and soft inside, season with cheese.
Herb Roasted Sunchokes – try something different! Sunchokes are similar to potatoes.

Slow Cooker Everything Seasoning Pot Roast
Equipment
- 6 qt. slow cooker
Ingredients
- 1 2.5 – 3 pounds chuck roast, trimmed of visible fat
- 1 tablespoon Everything but Salt Seasoning (from FlavorGod)
- 1 medium onion, sliced on the thick side
- 2-3 cloves garlic, minced
- 1 (14.5 ounce) can fire-roasted tomatoes (do not drain)
Instructions
- Season both sides of roast with Everything but Salt Seasoning. Place roast in slow cooker
- Add sliced onions, garlic, and can of fire-roasted tomatoes.
- Cover, and let cook on LOW for 6-8 hours (or on high for 4-6 hours). Shred meat if desired, or serve in large pieces.
