This recipe showed up on a food blog I was viewing and I noticed there were several versions of it. Based on what the reviewers said, I came up with one that I liked and the result was one that the family enjoyed too. The original recipe used thinly sliced potatoes and cooked them for 10 – 12 hours! I felt that was way too long and the potatoes would be mushy. Reviewers had mixed results on this, some good and some bad. A few cooked them for a much shorter time so I went with that and was glad I did. Also, please note the picture above is from the original recipe site and your results most likely will not look like this. There was no browning of the potatoes but they were perfectly steamed. Some of the reviewers made this in the oven and I want to try it that way too. Either way, this is a keeper!
Ingredients:
1/4 pound bacon
2 medium onions, thinly sliced
1 clove garlic, minced
4 medium potatoes, cubed or use new potatoes (I used small red potatoes and cut the bigger ones in half. Probably had the 3 or 5 pound bag of them)
1/2 pound cheddar cheese, shredded
1 tbsp. Olive oil
Green Onions or chives (optional)
Directions:
Line crockpot with foil, leaving enough to cover the potatoes when finished – this will help to not stick and to steam the potatoes. Not to mention, easy on clean up.
Brown the bacon and when done, dice it, set aside.
Use a small amount the bacon fat to sautee the onions on med-low until soft and caramel colored. Add one minced garlic clove in with the onions.
Toss the onions and cut potatoes together with 1 tbls. olive oil.
Layer half of the onions and potatoes mixture in the crockpot, add half the bacon, repeat with remaining onions and potatoes and then bacon.
Season to taste with salt and pepper. I omitted the salt as I felt the bacon added enough.
Cover with remaining foil.
Cook for about 3 1/2 to 4 hours (depending on how thick you cut the potatoes).
About 15-20 minutes before you serve open up the foil and cover potatoes with the shredded cheese; I used extra sharp cheddar.
Don’t close up the foil again or the cheese will just stick to it.
Replace lid on crock pot to allow cheese to melted.
Serve chives or green onions on top.
